September 1, 2014
WELCOME BACK FROM SUMMER BREAK!
I hope you all were able to do some fun stuff with friends and families. It was nice to get some down time and I know myself and the board members are raring to start our monthly meetings. We have an exciting list of "host" for our next three meetings with a highlight on the Presidents Ball at the Colonnade Hotel, 120 Huntington Ave, Boston, MA. Our Chef of the Year: Executive Chef Nicholas Calias, C.E.C. will be our host that evening and if you haven't experienced his talent before, you are in for a real culinary treat! Please save the date November 16th. We will have some exciting guest in attendance that night. We will announce our 2014 Chef of The Year and recognize those who have gone above and beyond in supporting our club.
Since the inception of The ACF Epicurean Club of Boston, little has changed in our principal goals. We are an organization based on promoting the professional image of the American Chef through education of all culinarians at all levels. We are a leader in the industry offering educational resources, training, certification, Scholarships for Culinarians, support of community charities, culinary competitions, and the Chef & Child Foundation, which promotes proper nutrition to help combat childhood obesity. If you are not part of our organization, we invite you to join us or if you are a member we are asking you to bring a new member with you to our next meeting. The networking alone will enhance your professional growth. As you know I am still very active trying to increase our Associate Members and our Professional Members which all help support the promoting of our profession, with an emphasis on the history and skills of our craft.
Our next meeting is on September 22nd at Georges Bank Wholesale Seafood Company in Boston.
Chef Jasper White and Matt Henderson are the owner Partners of this Chef driven seafood company. I have had the pleasure to attend a seminar where owner Matt Henderson gave a compassionate lecture on sustainable seafood. There will be demonstration and lecture on sustainable seafood and I hope to see you all there!
As our club focuses on Growth and Certification, I would like to take this time for a "Certification Minute"! With thousands of chefs competing in a job market, it is essential to prove your culinary competency. Certification through the American Culinary Federation demonstrates skill, knowledge and professionalism to food service industry. Certification is not only a benchmark for personal and professional achievement but it has also become recognized as a standard in the industry. Differentiate Yourself, Certification Matters! The next test will be at Le Cordon Bleu College of Culinary Arts in Boston. For more information please contact Vice president James Connolly, CEC, CCA, AAC at james.connolly@atriaseniorliving.com

NEWCHEF FASHION
Collection
At the National Convention NEWCHEF came to the rescue of one of our members that had his luggage lost. They got a new chef coat for him to use until his arrived.
I asked NEWCHEF to put together a line of logo chefware for our members to wear and have available to them in and out of the kitchen. I think you may be pleased to see what is availible to you in just days.
NEWCHEF did a STELLA job.
Please allow NEWCHEF to come to YOUR Rescue!!

Featured Chef's
of the Month
To all the Chef's
That had to work in all the hot, busy, small and or large kitchen this summer. You were working hard to promote Foodservice, Cooking and Hospitality. While you were working hard, guests were enjoying your efforts. I dought very much, that many of them came back to the kitchen to utter the word so let me.
THANK YOU!!!

This Months Restaurant Spot Light

The New
NEBO CUCINA
520 Atlantic Ave
Boston
After my Ex-Wife came down with Ciliac in 2008, it was hard to find good restaurants to enjoy great food. However I found one that made there own pasta and sauces in old world style with and with out gluten. Nestled in the desert of pizza and pasta restaurants in the North End there was an Oasis.
I met the owners Carla and Christine Pallotta, and found that they were very familiar with the affliction and offered there whole menu gluten free. At that time they were in a small location close to the Boston Garden.
Here is the unknown truth the location ( a small space that sat about 60 people ) was located in a building that had been sold and the landlord wanted to double there rent. The space could not sustain the costs.
They decided to relocate to there current spot. A "BIG" Investment and Gamble. Well, they bet correctly. There food was always great now there location was even better than expected.
Their menu and extensive wine list can be attained at the spacious Bar,
in the pictures Dinning-room, looking out on to the Rose Kennedy Greenway or in one of the 75 Patio Seats outside across from the Greenway.
Congratulations to the sisters for reaching the unexpected one day cover total of over 800 in one day in mid August.
"Bravo" for all of the attention that they have brought to the city of Boston Restaurant Scene, with Local and National exposure ..
inspired by their mother's and grandmother's classic Italian recipes as well as their travels through Italy, Chef/owners Carla Pallotta & Christine Pallotta decided to open Nebo Cucina & Enoteca in their childhood neighborhood of Boston's North End. Nebo Cucina's 520 Atlantic Avenue on Boston's Waterfront offers a menu which captures the true essence of dining in an Italian home.
Nebo's industrial decor honors their old world Italian neighborhood with original structural beams, brick vaulted ceilings, Venetian plaster walls and marble counter tops . Sit at one of our 75 outdoor patio seats and experience a true Italian lifestyle. Enjoy house made bread, rustic Italian dishes and a variety of pizza and drink any of the 100 Italian wines or unique cocktails while surrounded by a view of Boston's beautiful skyline and the Rose Kennedy Greenway.
When I visited last I had the Bobby Flay "Throw Down" Winning Eggplant Lasagna
"I recomend it"
