"A wafting and distinctly cool nose featuring essence of white flowers and Meyer lemon slides gracefully into bright, clean and utterly delicious middle weight flavors that possess lovely depth and length on the markedly dry finish. This is dry but not aggressively so and I very much like the yeasty character that adds significant interest to the finale. For my taste this is drinking perfectly now though it could easily be held. Lovely and understated."

The 2009 Gastronome has not yet been reviewed. This Cuvee is intended to be served with food and as such it's secondary fermention is designed to complete at lower pressure than most Champagne. As a result the wine is more vinous and is excellent when paired with a meal, rather than as a  precursor to.

"The 2006 Brut Chardonnay Blanc de Blancs Cuvée Fleuron brings together all the best qualities of the house style. Rich, layered and expressive, yet with tons of mineral cut, the 2006 Fleuron has it all. Honey, almonds and dried flowers add nuance as this rich, broad-shouldered Champagne opens up in the glass. The Fleuron is a blend of fruit from Chouilly, Cramant, Cuis and Oger that spent 72 months on its lees. This bottle was disgorged in January 2013. Dosage was 6 grams/liter."

About Pierre Gimonnet

The Gimonnet family has been growing vines in Champagne since 1750. In 1935 Pierre Gimonnet, grandfather of current owners Didier and Olivier, began producing champagne in the village of Cuis.

Didier and Olivier own 30 hectares in total; 16 hectares are Premier Cru from the village of Cuis. A high percentage of their vineyards are Grand Cru - 12 hectares in total, spread across the villages of Cramant, Chouilly, Oger and Aÿ. The Grand Cu vineyards have an average age of 40 years. Didier takes a great deal of pride in the fact that he blends his Grand Cru fruit with the 1er Cru wine from Cuis, making truly great wine available at  a reasonable price. It would be significantly more profitable, though less noble, to bottle the Grand Cru fruit as stand alone wines.

All the Pierre Gimonnet wines go through primary and malolactic fermentation in stainless steel tanks. Reserve wines are stored in bottle as opposed to tank, which is the norm in Champagne. This is done to slow down the evolution process and maintain freshness.

Gimonnet Brut Premier Cru Cuis is quintessential Blanc de Blancs. Stony and mineral with racy acidity this is really lovely champagne, enjoy!
