 "(75% pinot noir and 25% chardonnay from Ambonnay, 50% from 2010, 25% from 2009 and 25% from 2008; disgorged in July, 2013 after two years on its lees):  Light yellow.  Pungent aromas of poached pear, strawberry, orange pith and gingery spices.  Juicy, penetrating citrus fruit flavors give way to deeper red berries with air and pick up a smoky nuance.  Finishes spicy and long, with lingering floral character and good clarity. "

 "(a 50/50 blend of chardonnay and pinot noir; aged for 60 months on its lees and disgorged in May, 2013):  Light yellow-gold.  Pungent, oak-spiced citrus and orchard fruits on the intensely perfumed nose.  Broad, palate-staining pear and tangerine flavors are given depth by notes of cherry pit and vanilla.  Shows impressive power and lift on the finish, with the vanilla and pear notes echoing.  This distinctly rich Champagne has the heft to handle the richest, most buttery foods."

About Henri Billiot 

Owned and operated by Serge Billiot and his daughter Laetitia. The vineyards have been in the family since early in the 20th century. Whilst pressing grapes for Mumm and Moët & Chandon, Serge's great-grandfather Louis Billiot decided to bottle some of his own wine. Henri Billiot (Serge's Father) created Champagne H.Billiot et Fils after he inherited the vineyards. Serge took over in 1954.

 

Laetitia has taken over most of the day-to-day activities from her father and she is a force to be reckoned with. She runs the small but very busy estate as well as looking after her family and is a perfect example of how young women are making a huge impact on the wine world.

 

The estate comprises of 5 hectares of Grand Cru vineyards spread across 18 different mid-slope parcels of limestone in Ambonnay. The wines are fermented in enamel-lined steel vats with both cuvée prestige Laetitia'( named after Serge's daughter) and 'Julie' (named after Serge's Grand-daughter) aged in old oak barrels. Malolactic fermentation is blocked, as the wines are already quite rich due to the maturity of the vines. The wines are neither fined nor filtered.
