Domaine A & F Boudin (Domaine de Chantemerle)
Adhemar and his talented son Francis make up the team at Domaine Boudin. The estate produces 3 wines from the region's highly valued Kimmeridgean soils (composed of calcareous clay with a significant proportion of lime rich marine fossils) - Chablis, Chablis 1er Cru "Fourchaume" and Chablis 1er Cru "l Homme Mort".
The AC Chablis is sourced from 11.5 hectares of vineyards on two different hills - 5.5 ha near village of Villy and 6 ha from the village of Chapelle Vaupelteigne, where the winery is based. The average age of the vines used to make the Village Chablis is 25 years. Vinification is done in a classic style - the grapes are pressed with a low pressure
pneumatic press. Fermentation takes place using ambient yeasts and the wine is matured in enamelled stainless steel tanks for seven to ten months before bottling. The Boudins eschew the use of any oak in the ageing process to preserve the minerality and freshness that are the hallmark of great Chablis.
A note for optimal consumption:
The wines of Domaine A & F Boudin often benefit from a brief decant prior to serving. These are white wines that really flourish a little time and a little air.
