Didier Gimonnet
Champagne's Chardonnay champion
 

The Gimonnet family have been growing vines in Champagne since 1750. In 1935 Pierre Gimonnet, grandfather to current owners Didier and Olivier, began producing champagne in the village of Cuis.

 

Didier and Olivier own 30 hectares in total, 12 of which are Grand Cru, spread across the villages of Cramant, Chouilly and Oger. 16 hectares are in the village of Cruis with the rest in Vertus, Aÿ and Mareuil-sur-Aÿ. The Grand Cu vineyards have an average age of 40 years.  All the Pierre Gimonnet wines go through primary fermentation and malolactic fermentation in stainless steel tanks. Reserve wines are stored in bottle as opposed to tank, which is the norm in Champagne. This is done to slow down the evolution process and maintain freshness.  

 

The traditional vintage of Gimonnet is the Fleuron 1er Cru brut. It is produced in the best years only and represents the biggest production of the vintage wines. It is classic Gimonnet, with around 75% of the grapes coming from the Grand Cru villages of Chouilly (45% of the total blend), Cramant and Oger. Around 23% is sourced from Cuis 1er cru, added to maintain the Gimonnet signature freshness. It is aged in bottle for 48+ months and released with a dosage anywhere from 6 to 8 g/l depending on vintage.
