JAB's Favorite Recipes: A Pumpkin Bread to Brag About
 What's the preferred pairing for your pumpkin spice latte? A slice of sweet pumpkin bread, provided by JABBER Georga Levenhagen. {Team JAB Managing Editor Rachael Hodyno is indulging in both right now!} Georga recommends letting the loaf rest on a counter for a few hours before serving ... and we dare you not to sneak a nibble.
3 cups all purpose flour
3 teaspoon cinnamon
1 teaspoon salt
1 teaspoon baking soda
4 eggs
2 cups sugar
2 cups fresh pumpkin*, or 1 can solid pumpkin
1-1/2 cup canola or vegetable oil
1/2 cup chocolate chips, dried cherries, chopped nuts or cranberries (optional).
In large bowl, combine flour, cinnamon, salt and baking soda. In a second bowl, beat eggs, sugar, pumpkin and oil. Stir wet ingredients into dry ingredients until moistened. Fold in any of the optional add-ins, and pour into 2 large greased loaf pans. Bake at 350 degrees for approximately 60-70 minutes, checking until toothpick comes out clean. Cool for ten minutes before removing from pans.
Prepping Fresh Pumpkin Cut into chunks, peel, and cook until soft. Mash with potato masher and put in colander or strainer to press out as much water as you can.
