JAB's Favorite Recipes

It's not often we look north of the border for an amazing guacamole. This year, join the fiesta on site or celebrate Cinco de Mayo at home with this recipe from Uncle Julio's Mexican restaurant in Boca Raton, a favorite destination for Browardian JABBERS "abroad".
Ingredients
6 avocados
1/4 tablespoon olive oil
2 lemons, juiced
1 teaspoon salt, to taste
1/2 cup chopped tomato
1/4 cup chopped white onion
Directions
Halve and pit the avocados. With a tablespoon, scoop out the flesh into a bowl. Using the same bowl, mash the avocados using either a fork or a potato masher, leaving them still a bit chunky. Stir olive oil into avocado. Add remaining ingredients and mix well. Salt to taste. Lay a piece of plastic wrap tight on any remaining guacamole so it doesn't brown, and refrigerate.
