Veterans Day
November 11

Veterans Day is an official United States federal holiday that is observed annually on November 11, honoring people who have served in the U.S. Armed Forces, also known as veterans.  Veterans Day is not to be confused with Memorial Day; Veterans Day celebrates the service of all U.S. military veterans, while Memorial Day is a day of remembering the men and women who gave their lives and those who perished while in service.

We say THANK YOU to all of our Veterans.  We appreciate you!

I am feeling just SOUPER! 

The chilly weather, smoky smell in the air, and shorter days just feels like a pot of soup.  

I served this soup at Thanksgiving 2 years ago, and even the picky eaters flipped out over it.  Give it a try!

Curry-Scented Butternut Squash Soup.  Now that we know that fat doesn't make you fat, this rich soup is beyond luscious--and you won't get fat eating it.

Ingredients:
1 butternut squash, 2 1/2 lbs (1.1 kg) (6 cups/1.5 L cubed)
2 large sweet apples such as Fuji or Honeycrisp
3 medium onions
2 tbsp (30 mL) butter
1/4 cup (50 mL) plus 2 tbsp (30 mL) packed dark brown sugar
1 1/2 tbsp (22 mL) curry powder
6 cups (1.5 L) chicken or vegetable stock
1 container (8 oz/250 g)8 oz) mascarpone cheese (you can susbsitute some heavy cream or half and half also about 8 oz.)
2 tsp (10 mL) salt
Garnish with sour cream and snipped fresh chives (optional--or, as they do in Provence, a swirl of good olive oil, also optional)


DIRECTIONS:

Peel squash and apples; cut into 1-in. (2.5-cm) cubes and dice onions using a chef's knife

Melt butter in large Stockpot over medium-low heat. Add onions; cook 5-6 minutes or until tender, stirring occasionally. Add squash, apples, brown sugar and curry powder. Cook and stir 1 minute or until curry powder is fragrant. Add stock and bring to a simmer over medium heat. Cook 24-26 minutes or until squash is very soft. Remove from heat.

Carefully ladle about one-third of the squash mixture into blender container. Cover and blend until smooth. Pour blended soup into Stainless (6-qt./6-L) Mixing Bowl. Repeat two times with remaining squash mixture.(If you have one of those immersion blenders, it is perfect for this)

Return soup to Stockpot and whisk in mascarpone and salt until mascarpone is completely incorporated. Bring to a simmer over medium heat and remove from heat. Garnish each serving with sour cream and chives, if desired.

Yield:
Makes 12 cups (2.8 L) or
8 servings of 1 1/2 cups (375 mL) (use smaller servings if it precedes Thanksgiving dinner--more like 1 cup)
