9/11 Remembrance Day

The September 11th National Day of Service and Remembrance is the culmination of efforts originally launched in 2002 by the 9/11 nonprofit MyGoodDeed with wide support by the 9/11 community and leading national service organizations. This effort first established the inspiring tradition of engaging in charitable service on 9/11 as an annual and forward-looking tribute to the 9/11 victims, survivors, and those who rose up in service in response to the attacks.

In 2009, Congress designated September 11th as a National Day of Service and Remembrance under bipartisan federal law, and charged the Corporation for National and Community Service with helping to support this effort across the country.

On the anniversary of the September 11th attacks, Americans will unite in service in the same remarkable way that so many came together following the attacks.

Although summer blooms are fading soon, there's no reason not to have color throughout the fall. If you're looking to plant something now, there are several options from pansies and mums to kale and ornamental grasses. Check with your local garden center or nursery to see which varieties are best for our region.

Every now and then a cake is needed, and I mean a "from scratch" cake.  This recipe is a family recipe, and it is a cake that my mother made famous in our family.  We call it The Ant Cake because it is so dark that a slice of it looks like a thousand ants just invaded your picnic.  It is best with a pure vanilla butter icing, and we usually make it unadorned except for plenty of icing made with real butter, of course.
Here it is, in all its historic glory:

Ant Cake
Put in a large bowl (sift if you like, if not, you can fluff it up with a large whisk):
2 C. flour (cake flour is fine if you have it; if not, don't worry)
2 C. granulated sugar
1-1/2 tsp. baking powder
1-1/2 baking soda
1 tsp. salt
� C. cocoa (or more, it says)

Put in a small bowl and beat or whisk together the first 6 ingredients:

� cup of oil (I would use coconut oil or grapeseed oil, not corn oil)
2 large eggs
1 tsp. vanilla
Add 1-1/2 C. hot water, beating so the egg doesn't cook

Add to the dry ingredients in the larger bowl and beat well.

Bake in greased and floured cake pans at 350� for 35 minutes until a toothpick comes out clean when inserted into one of the layers.  Let the layers cool on a rack and ice when cool.

ALONG THE WELCOME TRAIL

We were invited to a dinner party recently at the home of close friends.  I met them and their then-college-student son when I was doing welcome visits in a new neighborhood.  She was out walking when I stopped and asked if she had her welcome visit yet.  "No," she said, unsure what a welcome visit was.  I told her as we walked together, and I learned that she was originally from Belgium, and her husband originally from Africa, and that they had moved from another part of Delaware County.  She invited me in to their beautiful new home (they bought the model, furnished and decorated).  It was about 7:30 p.m.  At 10:30 p.m. I called Bob, my husband, to tell him I was having a perfectly wonderful time with a great family, and that I would be home soon, but don't worry.  That was 16 years ago, and the friendship has only grown.
