Superbowl Game day is notorious for its effect on our eating habits, with the average person consuming 1,200 calories from snacking alone. Here are some ideas to help finish the event well without regrets.

  • Have fun with fruits. Make a fun display with your team's colors or numbers; make kabobs with toothpicks and serve with a fun fruit dip using protein rich Greek yogurt.
  • Load up on veggies. Veggies can also make a fun colorful display or kabobs. Place carrot and celery sticks in individual small cups with a fun veggie dip right in the cup. Serve an assortment of veggies with guacamole or hummus.
  • Bring your favorite side dish to ensure there will be at least one healthy option if you are attending a party.
  • Try to eat the food with the lowest calories first so you will be more full when you get to the higher calorie items, and will consume less of them.
  • Don't start the party hungry; have a protein drink before arriving.
  • Use a small plate. Fill it once in the first half of the game, and once for the second half of the game.
  • Make this recipe crowd-pleaser found in my Culinary Creativity book:

 

Mexican Fiesta

 

2 c organic vegetarian refried beans, fat-free

1 3.5 oz can chopped chili peppers, green

5 oz Monterey Jack cheese, or use goat cheese

2 c brown rice, cooked

2 ½ c enchilada sauce

1 lb organic chicken tenders (optional-slightly steamed)

 

Spray 9" square dish with olive oil.  Spread beans on bottom.  Layer with chicken tenders (or use sliced chicken breasts), grated cheese and chopped chilies.  Cover with rice.  Pour sauce over all.  Bake for 30 minutes at 350 degrees. 

 

Serve with shredded lettuce, tomatoes and organic corn chips.
