Cauliflower Soup
This is a super easy and absolutely delicious soup for the cool Fall weather! It only takes three main ingredients and sounds too simple to be so delicious!
1 or 2 tsp. coconut oil
1 onion, diced
1 head cauliflower, chopped
5 cups water
Sea salt and cracked pepper, to taste
Place coconut oil in a large pot and saute onion until transparent.
Add 1 cup water and cauliflower and cover to steam for 15 minutes, or until tender.
Add remaining water and bring to boil.
Reduce heat and simmer for 20-30 minutes.
Remove from stove and blend with immersion blender until smooth. (If you don't have one, a potato masher works well.)
Add 1/2 tsp. sea salt and 1/8 tsp. cracked pepper (or to taste).
Even though cauliflower is a "white food", it is extremely healthy, being high in vitamin C, folic acid, B6, vitamin K, choline, potassium, fiber, manganese, etc. So, it's a great antioxidant as well as supporter of detoxification.
