This is one of my favorite recipes for a tasty and healthy, cool summer salad! Enjoy!!
Spinach Pomegranate Salad
1/2 c precooked brown or basmati rice
1/2 bag organic spinach (cut into small pieces)
2 Tbsp lightly roasted pine nuts
1/4 c pomegranate arils (seeds)
1/4 c goat or feta cheese
2 Tbsp chopped purple onion
1/2 chicken breast (optional), precooked, chilled and cubed
Toss all ingredients using "Dressing for Greek Salad" recipe on page 93 of my Culinary Creativity cookbook. (Equal parts lemon juice and olive oil; pressed garlic, oregano, sea salt and pepper.) Serves 2-4.
