Recipe of the Month - Grandma's Muesli
A traditional probiotic/prebiotic breakfast or snack!
- A probiotic, usually many different strains of good bacteria, provides for a healthy immune system and gut.
- A prebiotic is a medium that allows good bacteria to grow properly in the intestinal tract, like fiber. This recipe has an amazing 7 grams per one cup serving!
Combine the following:
2 cups gluten-free rolled oats
2 containers Stoneyfield Greek yogurt - plain (5.3 oz. each)
1 cup coconut milk
1/2 cup water
1 cup pure cherry juice (I like Knudsen brand)
1 Tbsp fresh squeezed lemon juice
1 Tbsp cinnamon
1/3 cup ground flaxmeal
6 dried plums (prunes), cut in bite-size pieces
1/4 cup pecans
Refrigerate for 6-12 hours before serving.
Makes 5 cups.
Nutrition content (grams) per 1 cup serving:
Protein - 14
Fat - 10
Carbohydrates - 43
Fiber - 7
Calories - 315
1 cup makes a great breakfast; 1/2 cup makes a great snack!
You may also use other milk substitutes, other juices, dried fruits and nuts for variation.
