These are absolutely yummy! Who says healthy food has to be boring? Your whole family will love these. Tastes delicious with a scoop of organic frozen vanilla yogurt! Very rich - a small portion goes a long way!
Protein Fudge Brownies ½ cup butter (Substitute: ¼ cup butter + ¼ cup baby prunes) 2 eggs 2 tsp vanilla ¾ cup Xylitol powder 1 tsp baking powder ½ cup cocoa (I like the organic dark chocolate) ½ cup Designs For Health chocolate whey protein powder (from Nutritional Direction) Preheat oven to 350 degrees. Mix butter, eggs and vanilla. Mix in dry ingredients. Pour into oiled 8" square baking pan. Bake for 20 minutes (until edges start to pull away. Do not cook until middle is set or you will overcook them.) The brownies don't really need frosting, but if you want extra rich, here ya go! Fudge Frosting 4 Tbsp cocoa 6 Tbsp. xylitol 4 Tbsp. Butter 1 tsp vanilla Whisk together cocoa and xylitol. Melt butter in microwave and add vanilla. Combine with cocoa and xylitol.
