Recipe of the Month

  

Butternut Squash
Macaroni & Cheese
   

  

Ingredients:

8 ounces organic whole wheat rotini
1/2 cup fat-free milk
1/2 pound butternut squash, peeled and chopped
1 cup cheddar cheese
1/2 teaspoon salt
1/4 teaspoon dry mustard
Pepper, to taste
1 tablespoon Parmesan cheese, freshly shredded
1 tablespoon bread crumbs

 

Directions:

 

1. Prepare rotini according to package directions.

2. In medium saucepan, simmer milk with  

squash until combined.

3. Remove from heat. Add cheddar cheese,  

salt, dry mustard, and pepper to taste.

Mix to combine.

4. Pour drained pasta into 8-inch square  

baking dish or deep-dish cast iron skillet,

stir in cheese mixture, and top with Parmesan  

and bread crumbs.

5. Bake at 375�F for 20 minutes.

  Tip of the Month

Fire ants are (unfortunately) not uncommon to our area. For such a tiny insect, they sure can cause a lot of anguish and frustration. I often get asked if they are harmful to the plants and the answer is no. However they can be extremely irritating to the gardener. But have no fear, for I have the perfect organic solution to your fire ant problems. Mix 4 TBS of powdered sugar and 2 TBS of "20 Mule Team Borax" together. Sprinkle this mixture anywhere you are having pest issues. This natural, multi-purpose mixture attracts the ants to the sugar and kills them with the borax. Repeat every week until the pests are gone and enjoy being ant-bite free!

Volunteer of the Month  

Rebecca Williams 

 

"There's nothing better than home grown tomatoes..." states Rebecca Williams, another of our steadfast volunteers with a bright green thumb. Rebecca, a West Monroe native, now residing in Pineville, grew up around gardens her entire life which developed a desire to pick up on the hobby herself. From planting flowers and watching vegetables grow, Rebecca has a genuine passion for gardening, so it comes as no surprise that she made a great addition to the Good Food Project. After learning about the GFP, Rebecca instantly became moved and valued the idea of providing delicious, fresh vegetables to individuals who otherwise wouldn't be able to have any.

 

"What's so wonderful about the GFP is that everyone can benefit from it," which is an accurate statement considering Rebecca, even with her gardening background, was grateful to discover one of the Good Food Project's workshops highlighting the art of composting. After realizing her original approach wasn't completely accurate, Rebecca was able to refine her methods and take what she learned back to her own garden. "I built two big bins, and my garden has already benefited from them; the soil is beautiful!" she explains.  

 

Rebecca appreciates the concept of organic gardening and believes in the Good Food Project's mission, and is an avid promoter. "It's a joy to communicate with people of like minds, knowing that what you're doing is helping somebody that can't afford to buy fresh vegetables. It's a good feeling to know you're helping the community," she says. Rebecca truly encourages others to get involved and claims that, "The project overall is absolutely wonderful. Anybody that comes here and sees what's being done would think the same thing."

 

Rebecca Williams is a wonderful addition to the GFP family, and we could not be happier to have her as a part of our team.

Chicken Coop Complete!

    After much assistance from different volunteer groups and individuals, our new chicken coop is complete! These past few weeks left our "Builder of the Year" Mr. Roger Hanes stuck outside to enjoy this beautiful fall weather. The finished project is nothing short of a complete masterpiece, and we are eternally grateful for the hard work and dedication that went into its achievement. We are very much looking forward to the arrival of our very own laying hens that should be here any day. If you ever get the chance to stop by the   garden, I would be happy to give you the grand tour of this exciting new addition!
