Greetings!

We are happy to announce that the all-new MarkAllenCoaching platform has launched! We offer all the functionality needed to bring the best of the MarkAllenCoaching approach to your training and racing. Then over the next few months additional features will be added in that will further elevate MarkAllenCoaching above all others and help keep you in line with our motto "Always A Step Ahead."

As with working toward any significant and challenging goal, the launch of MarkAllenCoaching has taken time and effort but is not without reward. Tubular or Clincher Rims and Tires?

If you are in the market for new race wheels and have an open book (and an open wallet), there are few key decisions you will need to make. The first one is going to be which general wheel type you will buy. There are two basic categories: clincher rims and tubular rim. That refers to the type of tire that you will use on it. The specifics of which model of rim in either of those categories you will end up with will come second once you've made this first decision. So what's the difference between the two? NUTRITION

Tex-Mex Turkey Burger with Fiesta Potatoes, Pico de Gallo, and Avocado Spread



 

 

Tex-Mex Turkey Burger

 

Ingredients:

  • 8oz of 93% lean ground turkey
  • 2 teaspoons chipotle south west seasoning
  • Pepper jack cheese
  • Romaine lettuce
  • Whole wheat buns

Instructions:

 

Pre heat oven to 395 degrees.

  1. Mix ground turkey and chipotle south west seasoning.
  2. Divide into two 4oz patties.
  3. Place both patties in a roasting pan and cook until medium or approximately 20 min.

Fiesta Potatoes

 

Ingredients:

  • 1 small bag of small multi colored potatoes such as white, red and purple. You will need 4 of each of the 3 colors of potatoes or 12 small fingerling potatoes if just one color.
  • 1 Poblano pepper
  • Garlic salt
  • Cayenne pepper
  • Extra virgin olive oil

Instructions:

  1. Quarter potatoes.
  2. Use bottom part of 1/2 Poblano pepper and slice into strips.
  3. In a large bowl mix in quartered potatoes, Poblano pepper, 2 tablespoons of olive oil, 1/2 teaspoon garlic salt and 1/3 teaspoon cayenne pepper.
  4. Pour onto a roasting pan and cook at 395 degrees until crisp outside and soft inside or approximately 25 min.

Pico de Gallo

 

Ingredients:

  • 1 large tomato
  • 1 red onion
  • 1 bunch fresh cilantro
  • Extra virgin olive oil
  • Lemon juice
  • Salt

Instructions:

  1. Chop 1 tomato, 1/2 red onion and 1/2 bunch cilantro.
  2. Mix all ingredients together including 2 tablespoons of olive oil, and 1 teaspoon of lemon juice, add salt to taste.

Avocado Spread

 

Ingredients:

  • 1 Haas avocado
  • Chipotle south west seasoning
  • Limon juice
  • Garlic salt

Instructions:

  1. Scoop out avocado and mash into a paste with a fork.
  2. Stir in garlic salt, chipotle south west seasoning and 1/2 teaspoon of lemon juice to taste.

 

Putting it all together:

  1. Line the bottom half of the bun with romaine lettuce taken off the stalk and add 1 slice pepper jack cheese on top.
  2. Place burger on top of cheese.
  3. Gently scoop about 1 tablespoon of Pico de Gallo on top of burger.
  4. Generously spread avocado spread on the top bun and place on top of Pico covered burger.
  5. Serve Fiesta potatoes around one side of the burger and enjoy!

Meet the Iron Chef

Leo Di Canio
grew up in a home where food was a passion. Years later, Leo would apprentice for 3 years in Italy where cooking Italian food became his specialty. He then went on to college where he received a degree in Hotel and Restaurant Management, and then went on to graduate at the top of his class at the School of Culinary Arts in Atlanta Ga. In early 2010, he began running 5Ks and by December of that year completed his first Marathon in Las Vegas. That year he also completed his first sprint triathlon. 

In 2012, he teamed up with Mark Allen and began a journey to race every distance in triathlon including Ironman Florida 2013. In 2014 he finished his second Ironman and was awarded the HITS Endurance Athlete of the Year in his division and is currently training for his third full distance triathlon, Ironman Texas. Late last year he released a book about his incredible journey to becoming an Ironman titled, "I Will Be Iron" at IWillBeIron.com. His passions are his family, triathlon and to create delicious meals that are both nutritious and simple. Being a triathlete himself, Leo knows that triathletes are some of the busiest people around. His goal will be to create great meals that are full of flavor and nutrition, but easy to cook for yourself and your family.
