The Sweet Life
This flourless honey-almond cake is perfect for Rosh Hashanah! A special thanks to JAB Sales Executive, Lisa Moses, for sharing this simple, delicious and gluten-free dessert recipe. Enjoy!

INGREDIENTS:

Cake:  

  • 1 1/2 cups whole almonds, toasted 
  • 4 large eggs, room temperature and separated
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Topping:

  • 2 tablespoons honey
  • 1/4 cup sliced almonds, toasted 

DIRECTIONS:

Preheat oven to 350°F. Coat a 9-inch springform pan with cooking spray. Line the bottom with parchment paper and spray the paper. Finely ground whole almonds in a food processor or blender (yields approximately 1 3/4 cups). Beat 4 egg yolks, honey, vanilla, baking soda and salt. Add ground almonds. In a separate bowl, beat 4 egg whites until foamy, but not stiff enough to hold peaks. Gently fold egg whites into the nut mixture. Pour batter into the pan and bake 28 minutes or until golden brown. Cool for 10 minutes. Remove the side ring and cool completely. Drizzle top of the cake with honey and sprinkle with almonds just before serving.
