It's Time to Fiesta!

Mexican food always hits the spot! These sweet and savory enchiladas will surely be a hit at your Cinco de Mayo fiesta. Many thanks to JABBER and Mexican foodie, Daisy Hill, for the delicious recipe.
Black Bean and Corn Enchiladas
Ingredients:
1 can 15-ounce whole kernel sweet corn, drained
˝ red bell pepper, diced
˝ green bell pepper, diced
˝ cup yellow onion, chopped
1 16-ounce can black beans, drained
1 cup salsa
1 teaspoon ground cumin
20 corn tortillas
1 8-ounce bag Mexican cheese
2 cans enchilada sauce
cilantro
Directions:
Preheat oven to 350. Sauté corn, bell peppers and onion over medium-high heat for three minutes. Add black beans, salsa and cumin and cook for three additional minutes.
Fill each tortilla with black bean and corn mixture and sprinkle with cheese. Roll tortillas and place in a baking dish, seam-side down. Pour enchilada sauce evenly over tortillas. Sprinkle with remaining cheese and garnish with cilantro. Bake 30 minutes or until cheese is bubbly. Enjoy!
