Sweet and Savory

These two holiday dishes will be a hit at your Passover and Easter gatherings! You'll definitely want save room for seconds.

Chocolate Caramel Matzo Crunch aka Matzo Crack

Ingredients:

4 to 5 pieces of Matzo
1 cup dark brown sugar, firmly packed
1 cup (2 sticks) unsalted butter
1 cup chopped bittersweet chocolate, or semi-sweet chocolate chips
Toppings, as desired

 

Directions:

Preheat oven to 375 degrees F. Line a baking sheet with aluminum foil and/or parchment paper. Place one layer of matzo on the baking sheet, breaking it if necessary to fill the pan completely. Set aside.

 

In a large sauce pan, melt the butter and brown sugar over medium heat, stirring constantly. Once the mixture reaches a boil, continue to cook for an additional three minutes, still stirring, until thickened and just starting to pull away from the sides of the pan. Remove from heat and pour over the matzo, spreading an even layer with a spatula.

 

Place the pan in the oven and immediately turn the heat down to 350 degrees F. Bake for 15 minutes or until the toffee bubbles up and turns a rich golden brown color. If it looks like it is starting to burn, turn the heat down to 325 degrees F. Remove from the oven and immediately sprinkle chocolate over the pan. Let sit for five minutes to melt, then spread evenly with a spatula. Cool completely, then break into smaller pieces and enjoy! Makes approximately 30 pieces. 



Easter Egg Bake

"My mother-in-law's bacon, egg and cheese casserole is easy to whip up for Easter brunch and will have everyone asking for more!" ~Chae Haile, JAB Miami North Editor

Ingredients:
½ pound bacon, diced
½ sweet onion, chopped
4 eggs, beaten
2 cups frozen hash brown potatoes, thawed
1 cup cheddar cheese, shredded
¾ cups Swiss cheese, shredded

¾ cups cottage cheese

 

Directions:

Preheat oven to 350 degrees F. Grease a 9 x 9-inch baking dish. In a large skillet, over medium heat, cook bacon and onion approximately 10 minutes, drain. Transfer bacon and onion to a large bowl and stir in remaining ingredients. Pour mixture into baking dish and bake approximately 45 minutes or until eggs set and cheese browns. Let stand 10 minutes. Enjoy!
