February Calendar
Sat., Feb. 2 Groundhog Day Many winter weary folks hope that the groundhog doesn't see his shadow on this day and that spring will arrive early. According to the folklore from German settlers in NY and Pennsylvania, seeing his shadow means 6 more weeks of winter. Sun., Feb. 3 Super Bowl XLVII The Baltimore Ravens will meet the San Francisco 49ers in the New Orleans Superdome. An interesting fact of this game is that Baltimore head coach, John Harbaugh, and the 49ers49ers head coach, Jim Harbaugh, are brothers.
Sun., Feb. 10 Chinese New Year 2013 is the year of the Water Snake. According to Chinese mythology, the effects of the Snake will bring about developments in science, research, and technology. Thurs., Feb. 14 Valentine's Day Mon., Feb. 18 President's Day Banks and government offices will be closed on this national holiday that celebrates presidents Washington and Lincoln.

Perfect Pan Seared Steak
You don't have to light the grill to have a perfect steak when it's cold outside. Try this oven heated to pan seared method of cooking. This works best with meat at least 1 inch thick.
Pre-heat your oven. Set it on bake 275 degrees.
Place beef steaks on a foil covered pan & season lightly with salt & pepper. Cover the meat with foil and leave it in the oven about 8 minutes.
Melt 3 T of butter in a dish and have a basting brush ready.
(While the meat is in the oven, be heating a skillet on the stove.) Use a food thermometer to check the center of the meat. You're looking for an internal temperature of 95.
Remove the meat from the oven, brush the tops with melted butter, and place them in the very hot skillet. Cook approximately 1 minute. Use the tongs to check for browning. Flip the meat and brush the other side with butter. Cook another minute.
Remove the meat and make a small test cut. It should be rare when you first take it off, but it will continue to cook. Let it stand for a minute, and it should be medium rare. (Return it to the pan if you want it more done.)

For years, Americans remembered our first President, George Washington, on his birthday, Feb. 22. President Abraham Lincoln's birthday was Feb. 12. In 1971, a federal holiday was declared for the 3rd Monday in February to honor our past Presidents.

Presidential Quotes:
George Washington:
"There is nothing so likely to produce peace as to be well prepared to meet an enemy."
"Labour to keep alive in your breast that little spark of celestial fire, called conscience."
"Government is not reason, it is not eloquence, it is force; like fire, a troublesome servant and a fearful master. Never for a moment should it be left to irresponsible action."
Abraham Lincoln:
"America will never be destroyed from the outside. If we falter and lose our freedoms, it will be because we destroyed ourselves."
"Most folks are about as happy as they make up their minds to be."
"My dream is of a place and a time where America will once again be seen as the last best hope of earth."
