Coho Restaurant Newsletter                            November 2012
Greetings!,
Winter months are the times we get to play! Chef Bill has more time to expand his creativity, perfect new dishes, and explore culinary options. Starting in November, he'll be spanning the globe searching for menu ideas for his Foods of the World night. Every Wednesday night, we'll switch from our Pacific Northwest Cuisine menu to global fare. In addition to our regular menu, we've added a new prixe fixe menu for our Thursday through Saturday service, and he's already started working on our Holiday menus. We've got your itinerary all set - there's a whole world of food awaiting! Learn more...

What Makes Thanksgiving Tradition?  Thanksgiving Meal

Thoughts of food never seem to be far from our mind. Ideas for holiday feasts are swirling, waiting to be plucked and plumped out. At Coho, we offer what we consider a "traditional" Thanksgiving meal, compete with mashed potatoes, sweet potatoes, lots of vegetables, stuffed turkey, and incredible pies. But have you ever considered, what makes this traditional? And where did these traditions come from?

Tito's Drink

Martini, my dear? Try our newest bar addition, Tito's Handmade Vodka. It's got a crystal clear, smooth finish, leaves no aftertaste, and tastes absolutely fabulous! Plus, it's the only Certified Gluten-Free vodka in the US. Some producers add a little bit of mash back into the spirit after distillation, which would add gluten content into an otherwise gluten-free distillate (if using wheat as the base), but Tito's is 100% corn, made in Austin, TX with corn from the Midwest belt. All that and it's reasonably priced too! Learn more...

Tasting a Trio of Favorites
Salmon When we first started learning about wine, I was always mystified by the range of adjectives that winemakers use to describe the complexities of the juice that I was swirling in my glass. As I sniffed and tasted, I built an arsenal words to associate with different varietals, countries, and regions. There are wines that are fruity, herbaceous, woody, microbiological - the list goes on. Learn more...

Wine Pour

Our Italian Varietals Wine Dinner was such a hit, we thought you'd like to know more about the wines.

These wines well crafted, produced domestically, and are best enjoyed with food. Chef Bill deftly chose dishes that would pair well with each wines, and we've included the pairings to help spark your holiday meal planning ideas.

Recipe of the Month

Roasted Cauliflower Soup

Cauliflower is one of those under-appreciated vegetables that never gets star billing. But roasting brings out the sweet flavor and makes it worthy of a first course presentation or a hearty entree.

Our holiday toast to you: May you never forget what is worth remembering,
and may your holiday celebrations and New Year be filled with love, laughter, and goodwill for all!

Sincerely,
Anna Maria and All the Staff at Coho Restaurant
