Happy Monday everyone!

Do I see sunshine outside my office window???  I don't know about y'all but I'm ready for blue skies and a bright sun :)

On our way home from the wettest Panama City trip ever, my husband and I made a purposeful detour through Slocomb, Alabama, (home of the best tomatoes in the world)!  I bought a case of tomatoes and then spent the rest of the drive home planning how to eat them!   After giving a few to my two next door neighbors, I headed to the Buford Highway Farmer's Market for ingredients to three of my favorite tomato filled recipes.   See details, photos, and recipes below!  If you like tomatoes you are sure to like at least one of these recipes!

Tomato Sandwich on White Bread

2008_08-21-tomatosandwich2Ingredients:

  • White Bread
  • Mayo  (We use Duke's Light)
  • Salt
  • Pepper
  • Peeled and sliced fresh red tomatoes

Directions:  This is how we make ours.... Nothing fancy - no bacon or lettuce or even toasted bread. Just plain, white bread, lots of mayonnaise, salt, and pepper. The tomato juice runs out with the mayonnaise, leaving milky, pink drips on the plate... DELICIOUS!

Gazpacho

gazpachoIngredients:

  • 4 cups Clamato juice
  • 1/2 cup onion - minced
  • 1/3 cup olive oil
  • 1/3 cup red wine vinegar
  • 1/4 cup green bell pepper - minced
  • 3 Tablespoons parsley - chopped
  • 2 cloves garlic- minced (we use the kind in the jar)
  • 1/4 teaspoon Tabasco
  • salt & pepper to taste
  • 8 medium tomatoes - chopped
  • 2 cucumbers - chopped
  • 2 avocados - chopped
  • topping suggestions:  sour cream, garlic croutons, Parmesan cheese

Directions:

Combine Clamato juice, onion, olive oil, wine vinegar, green pepper, parsley, garlic, Tabasco, salt and pepper.   Refrigerate 6 hours or overnight.   Next day:  add tomatoes, cucumbers and avocados.  Refrigerate until all is cold.   Serve very cold with sour cream/croutons/Parmesan cheese or whatever you prefer!

Mrs. Bell's Tomato Pie

Classic Southern Tomato Pie Cut OutIngredients:

  • 1 9 inch deep dish baked pie shell
  •  4 cups tomatoes, peeled and sliced (I chop mine)
  • 2 teaspoon thyme
  • 2 heaping tablespoons of dried basil (Fresh basil leaves are even better. You can't use too much.)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 tbsp chopped dried chives
  • 1/2 cup chopped green onions
  • 1/2 cup sharp cheddar cheese
  • 1/2 cup mayonnaise (you can use plain yogurt instead)

Directions:

Thickly slice or chop ripe red tomatoes. Add salt and pepper. Add the thyme and basil and mix well. Put the seasoned tomato mixture into the pie shell. Sprinkle with the chives. Chop the spring onions and sprinkle on the top. Mix the cheese and mayonnaise. Place the mixture on top of the tomato pie. Bake at 350 degrees for about 30 minutes.

 

History:  The Bell Bouy was a small, unassuming building on the river side of Edisto Island. It was actually more like a fishing shack that backed up to the docks and shrimp boats dripping with lines and netting that brought fresh shrimp and fish to the store. But more than the best shrimp Edisto had to offer, the Bell Bouy sold Mrs. Bell's tomato pie.  It is the perfect combination of tomato, basil, and cheese in a pastry crust. Really. Yum.
