Recipe of the Week for Lent: Pesto-Stuffed Portobello Mushrooms

Savory and "meaty", pesto-stuffed mushrooms are the perfect little slider to serve as an appetizer or as a side dish. If you like things a little spicy, don't be afraid to use the red pepper flakes!

Ingredients
  • 12 baby Portobello mushrooms
  • � tsp garlic powder
  • � tsp onion powder
  • 1 tsp salt
  • 1 T soy sauce (liquid aminos for Gluten-free recipe)
  • 1 T lime juice
  • 2 T balsamic vinegar
  • water to dilute marinade
  • red pepper flakes to taste
  • 2 cups fresh spinach
  • 7 T olive oil (4 T to cook spinach, 3 T for pesto)
  • 1 medium shallot
  • 8 cloves garlic (4 to cook with spinach, 4 to process in pesto)
  • � cup walnuts
  • 1 cup fresh basil
  • � cup fresh parsley
  • parmesan cheese (optional, but highly recommended)
Directions

Preheat the oven to 375�F.

1. Clean & trim the mushrooms, removing the stalk and gills, and place cap-down in a bowl. Using a toothpick, poke holes into the mushroom caps' "meat" for the marinade to settle in.

2. Mix garlic powder, onion powder, salt, soy sauce, lime juice, balsamic vinegar and a little water. Pour marinade evenly over the mushrooms and top with red pepper flakes. Let sit while preparing the filling.

3. Pour 4 T olive oil in a pan set at medium heat. Add minced garlic and sliced shallot - coat in oil. Add spinach to the mix and wilt, stirring constantly. We're going to continue stirring until the spinach looks bright green and glistening, without being soggy. Remove from heat and set aside to cool.

4. For the pesto, blend walnuts, fresh basil, parsley, garlic and olive oil in a food processor/blender into a spreadable paste (cheese-eaters, blend some parmesan cheese into the mix as well).

5. Drain any leftover marinade from the mushrooms. Pack the spinach mix into the bottom of each mushroom, topping with pesto (garnishing with parmesan cheese).

6. Bake for 20 minutes and serve warm or room temperature.

The Health Ministry has been sharing meatless Friday recipes throughout Lent. All parishioners who went meatless on EVERY Friday in Lent can enter into a drawing to win a $100 gift card for Metropolitan Market. A Health Ministry box and note cards will be available in the Gathering Space after all Masses on Easter and the following weekend.  Simply write your name and contact information on a card and drop it in the box for a chance to win.

Dedicated volunteers worked hard on March 12, 2016 to clean up the campus of Saint Patrick Catholic School in time for Grandparents Day by pressure washing, weeding and turning over beauty bark.

A different approach to the foot washing ceremony during Holy Thursday Mass on March 24, 2016 will be taken at Saint Patrick Catholic Church. 

The Liturgical Commission in conjunction with the Jesuit priests want to ensure that anyone who wishes to have their feet washed can do so. The foot washing ceremony represents how all disciples should serve one another based on the example of Jesus.

Unending Prayers for Mercy

Thank you to all who attended the Healing Mass of Mercy for those who were survivors of sexual abuse, their families and friends and any other people who have been hurt or suffering in any way as a result of sexual abuse by clergy members and religious brothers and sisters.

The 162 people who attended heard songs and prayers that helped with the healing process and were touched in some way by the Grace that God in His merciful way extended.  We continue to pray for those most in need of God's mercy and love. 


It is through the open exchange of ideas and differing opinions that we grow and mature in faith, understanding and relationship with God and one another. We want to hear from you!

We Were All Irish for a Day

Thank you to all who attend the annual Corned Beef & Cabbage Dinner. The Knights of Columbus Tacoma Council 809 were wonderful hosts.  The food was delicious and the entertainment provided by the Shift Sailors and the SRS Irish Dancers  were amazing. We are looking forward to next years event.
