Sautéed Carrots with Sage

You can easily double, triple, or quadruple this small-yield side dish recipe to feed more. As one online reviwer says, "This takes carrots to a whole new level!"

Cooking Light NOVEMBER 2009

  • Yield: 2 servings (serving size: 1/2 cup)
Ingredients
  • 1 teaspoon butter
  • 1 teaspoon olive oil
  • 1 1/2 cups diagonally sliced carrot
  • 2 tablespoons water
  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 2 teaspoons fresh small sage leaves
Preparation

1. Melt butter in a large nonstick skillet over medium heat. Add oil to pan; swirl to coat. Add carrot and 2 tablespoons water. Partially cover pan and cook 10 minutes or until carrots are almost tender. Add salt and pepper to pan; increase to medium-high heat. Cook 4 minutes or until carrots are tender and lightly browned, stirring frequently. Sprinkle with sage.

BAC Fitness Maniac of the Month
 Bana Rai 
                      


    
Bana has been a member of Brenda Athletic Club Turlock Sport for one year. Bana is a nurse. She utilizes personal training at Brenda Athletic Clubs and works with certified personal trainer, Kathy Lopes.

Bana works out three times per week. She has seen many changes in her body since starting her fitness journey at BAC. She has lost 50 lbs, gained energy and feels better! The biggest changes in her life have been better sleep, stress reducing, weight loss and overall healthier.

Bana feels that BAC staff and facility have helped make her goals successful because as she says, "Amazing staff! Kathy is an amazing trainer, very knowledgeable and is absolutely wonderful. Kathy encouraged me to have better eating habits and always has challenging work outs!"

In her spare time, Bana likes to spend time with her family and children and likes to travel. 

Bana wanted to share some more thoughts about her sucess, "Kathy has been so amazing and supportive to me. She has been encouraging and helped me realize that slow and steady weight loss really is the best way to keep off weight. I just learned to make lifestyle choices and not consider it as a diet and stay focused."

Great job, Bana! Sounds like you love your trainer! We love Kathy, too!
