HOME MADE PIZZA DOUGH

If pasta isn't your thing, how about home made pizza?  The dough couldn't be simpler - then just add your favorite sauce, cheese and toppings.

WHOLE WHEAT PIZZA DOUGH

INGREDIENTS

1 package yeast
2 t honey
2 cups water, lukewarm
1 1/2 all-purpose flour
1 1/2 cups whole wheat flour
1 t salt
2 T olive oil

DIRECTIONS

1.  Dissolve the yeast and honey in 1/2 cup of the water.  Sit aside until it begins to foam (about 5 minutes).
2.  Put the flours and salt in a food processor and pulse until mixed.
3.  With the food processor running, add the yeast mixture and olive oil to the feed tube.
4.  Slowly add just enough of the remaining water to the feed tube until the dough forms a ball that rides around the work bowl on the blade.
5.  Transfer the dough to a bowl which has been coated with a little olive oil or non-stick spray.
6.  Cover the bowl with a damp towel and allow to rise for about an hour.

The dough is now ready to use!  This recipe makes enough for one large thick crust pizza or two large thin crust pizzas - or, use half now and freeze the rest for another time.

ARE GMO'S YESTERDAY'S NEWS?

As the arguments over genetically modified organisms (GMO's) and their labeling on food products rage on, there may be a new technology on its way to stir things up even further.

"SYNTHETIC BIOLOGY" may be the next great debate.  This is pretty technical stuff, but it essentially involves not just changing the genetic makeup of organisms, but creating entirely NEW ones from scratch.

This fall has shaped up to be a beautiful one as far as colorful foliage is concerned.  But alas, all those leaves will soon be on the ground - and it will be time for the cleanup work to begin.

Before you start raking them up - or blowing them into the neighbor's lawn - consider using them for mulch or composting them.  Too boring?  The Old Farmer's Almanac has got lots of other suggestions.
