Fast. Simple. Inexpensive. What more could you ask for in a summer recipe?
INGREDIENTS
1 lb dry pasta ("short" pasta works best, but any kind will do)
4 - 6 medium tomatoes, chopped
12 oz mozzarella, farmers, or feta cheese,torn or crumbled into 1/2 inch pieces
1/4 cup olive oil
3 cloves garlic, minced
1/2 cup fresh basil leaves, lightly packed
salt and pepper to taste
DIRECTIONS
1. Cook pasta according to package directions. Drain and sit aside.
2. Mix olive oil, garlic, salt and pepper in a large bowl. Add cooked pasta to bowl and toss.
3. Add the tomatoes and cheese to the pasta and toss gently.
4. Sprinkle basil leaves over the top, add a little more cracked pepper and serve.
