GRILLED SWEET CORN
Sweet corn boiled in water is awesome, but in our opinion the best way to cook corn is on the grill.
This approach can be intimidating if you've never tried it, but don't be afraid! Here's how we like to do it:
1. Remove the husks from the corn - except for the last layer or two next to the kernels. Leaving a little husk will help prevent the kernels from getting charred to quickly.
2. Soak the corn in a pot of cool water for an hour or so prior to grilling. Again, this step helps to ensure that those last layers of husk you have left on the ear don't dry and burn before the corn is done cooking.
3. Grill the corn over a medium-high heat. Turn often! Once the corn starts to get a few charred kernels here and there, you're done! Depending upon how hot your grill is, total cooking time is 10 - 20 minutes.
4. Remove the last few layers of husk and serve!
And don't be afraid to make extra! On the off chance that you have any leftovers, cut the kernels off the cob with a knife and store in an airtight container (these can even be frozen!) Then use as needed - they are great in tacos, soups, salads and more.
NOTE: If the corn you are using is a few days old or more, you may want to stick to the boiling water method of cooking it. That way, you can add a few tablespoons of sugar to the boiling water to help return some of the corn's sweetness.

Once corn is picked, it immediately begins to lose its sweetness, so the less time it takes to get from field to plate, the better. That's why the corn you buy at Catskill Harvest is delivered throughout the week and is fresher than anything you'll ever get at big supermarkets. If you've ever thought about growing your own sweet corn, you are too late for this year, we're afraid - it needs to be planted in late spring or early summer. But if you've got some space in your garden, give it a shot next year. Here are some tips for success. |
