SIMPLE SUMMER SALAD DRESSINGS  

 
Once you've stocked up on your local sweeteners, how about trying them in a few light home made salad dressings that are perfect for summer?

Maple Balsamic Vinaigrette

2 T balsamic vinegar
2 T maple syrup
2 T olive oil
1 - 2 t mustard (dijon and whole grain are great choices)
salt & pepper to taste

Whisk all ingredients together or shake in a jar with a tight fitting lid.  This dressing keeps well in the fridge for 2 or 3 days.

SUBSTITUTION IDEA - Replace the balsamic vinegar with rice vinegar and replace the mustard with a squeeze of lime juice - yummy!


Honey Balsamic Vinaigrette

2 T balsamic vinegar
2 T olive oil
1 T dijon mustard
2 t honey
salt & pepper to taste

Same instructions as above. 

These recipes are light, simple and delicious.  In both recipes, feel free to play around with the proportions until you get them just the way you like.

UGLY VEGETABLES

Did you know that the European Union once banned certain fruits and vegetables from being sold if they were deemed to be too "ugly?"

To combat food waste (2014 is the "European Year Against Food Waste"), that ban has been lifted on many of those items at this point; however, many food distributors in Europe still opt to throw away foods whose looks are not up to par - 300 million tons of it annually to be precise.

 Not so at European supermarket chain Intermarche - check out their new ad campaign where ugly is celebrated.

By keeping that much waste out of our landfills, composting is great for the environment.  And as any good gardener knows, its great for the soil, too.
