EASY SLOW COOKER PULLED PORK 
SANDWICHES

 
As the days get warmer, few of us want to spend time indoors - let alone in a hot kitchen.  Although we often associate slow cooker recipes with hearty meals in cooler seasons (comfort meals like beef stew come to mind), the slow cooker, or "crockpot," is perfect for the summer, too - it doesn't heat up the kitchen and allows you to spend your time on more important activities - like lounging by the pool.

This recipe for pulled pork is one of our favorites - not only is it extremely simple to make (total estimated prep time is about 15 minutes), it is always a big hit at bar-b-ques.

INGREDIENTS

*  2 - 3 lb pork roast (butt or shoulder roast are both great, but please know your farmer or choose "humanely raised")
* 1/4 cup apple cider vinegar
*  3 T worcestershire sauce
*  2 t cumin
*  1 jar of your favorite bar-b-que sauce (our favorite is locally made Sara's "hot," available here at the market.)

INSTRUCTIONS

1.  Cut any excess fat off pork, season with salt and pepper and place in slow cooker.
2.  Mix 1/2 cup water with the cider vinegar, worcestershire sauce and cumin.  Pour over pork.
3.  Cook on low for 8 - 10 hours or on high for 4 - 5 hours.
4.  Remove liquid, remove bone if any, and return pork to slow cooker.
5.  Shred pork using 2 forks, then add the bar-b-que sauce.  Mix well.
6.  Allow to cook for another 1/2 hour or so on high, or until hot.

Serve on rolls of your choice with sliced red onion, cole slaw and extra sauce on the side.

SUMMER VEGETABLE GARDEN WATERING

Although we've been having frequent thunderstorms lately, it won't be long before the dry, hot days of summer are upon us.  You may be tempted to water your vegetable garden every day during those periods - but resist that urge.  Like most plants, the vegetables in your garden will do better if you water deeply, but infrequently.

For best results, try a soaker hose or light sprinkler.  Soak the soil well, then wait until it is almost dry before watering again.  This will encourage root growth and will help your plants survive dry spells when they occur.
