Sunny days and chilly nights ahead for Week 20.

We have a great bag in store for you all this week, with all the makings for borscht, squash soups, veggie mashes, and other sweater-weather treats. The Summer Share is almost over, but we still have room in our Winter Share, so don't forget to sign up soon to save your spot!

What's in the bag: everyone will get some green beans, spaghetti squash, potatoes, eggplants, beets and plums. You'll also have a gnarly, root bulb called Celeriac, also known as Celery Root. It's a type of celery that's cultivated specifically for its flavorful root rather than the stalks and leaves (which are still edible but more bitter-- good to use in soup or stock.) Peel the bulb (tutorial at the end of this tasty recipe), and use like you would potatoes or kohlrabi in a mash or soup.

In the Omnivore Bags you'll see either ground beef or chorizo, depending on what you got last week. We had anticipated putting chorizo in all the bags last week, but the spices didn't arrive at the butcher shop in time. If you got beef last week, you'll get chorizo this week, and if you got chorizo then, now you'll have some beef!

The Vegetarian and Vegan Share subscribers will get some kale and cauliflower, as well as a Red Kuri Squash (also known as Hubba Hubba, or Baby Hubbard Squash.) Prepare using any recipe that calls for another winter squash (Acorn, Butternut, etc.), and as always with winter squash, use a sharp knife and be very careful when cutting.

The Large Share subscribers will get a jar of dill and garlic pickles from Wholesome Valley Farm-- these are a "live" product, so keep in the fridge and for the best crispy quality, use within three months. They're fine after that, they'll just get a bit softer. There are so many health benefits from eating fermented foods, and they're also tangy and delicious on sandwiches or on the borscht you might make with your beets!

And speaking of fermented foods, we also have a quart of pourable yogurt from Velvet View Farms in the Large Bags. This is a really special product for us-- Trevor met them right when they were getting started five years ago, and it was the first yogurt we carried in our share. It's made just a few feet from where the cows are milked, and is amazing in smoothies or as a substitute for buttermilk in pancakes or other baked goods. You can also use it as a marinade or a salad dressing (see our Yogurt Post, "Beyond the Parfait" here for more ideas.)

Sauerkraut

We are "harvesting" our first batch sauerkraut of the season!

When the first heads of organic green cabbage were harvested in July, they were shredded, covered in pink himalayan salt and set to ferment. And now, it's finally ripe and ready!

Sauerkraut, like our pickles, is a live product and will keep in the fridge for 3-6 months-- it's safe after that, but it'll just be softer. The jar lid should be "burped" occasionally to release gas pressure.

$7 per quart
