In every cellar in France right now you can probably listen to the sounds of fermentation - mostly silent but interrupted by the periodic bubbling of yeast turning sugar to alcohol. Aging, blending & bottling all come later in the process but this is the time when nature works its miracles.  Not that Beaujolais Nouveau should be the landmark for a vintage but it will make its appearance in about two months time.  After that come the rosés, the earliest ones released in mid-late December. Others of the 2016's will require some aging before being released but the excitement will begin building.  Keep an eye out for 2015 reds as this vintage was a good one over almost all of France.
