Happy 2013!
We're excited about the prospects for our new year, and all that we have planned to keep growing and expanding - not only as a co-op business, but as a growing community who cares about the environment, and the health and well-being of all.
In this issue, we have wintry salad recipes from one of our Beet members, who also happens to be a chef and culinary dynamo, plus a message from our new Produce Coordinator, Clara Chaisson, and information about our newly updated website. It's cold and flu season, so stay healthy by making the Beet your first stop for farm-aceuticals and holistic remedies. More on that below.

Lighten Up with Priscilla Martel
We are truly fortunate to have the remarkably creative culinary energy of Chef Martel in our community. Chef Martel is not only a Beet member and steady supporter, but she has enjoyed a long, interesting and diverse culinary career, including two award-winning cookbooks, ownership of two notable restaurants, inn management, a consulting company, recipe and product development, national food writing and much more.
I have had the pleasure of sitting down with Priscilla twice -once for the Gluten Intolerance Group of Shoreline East, and most recently for the Local Beet Co-op. At our first meeting, Priscilla and I discussed gluten-free baking with nuts, and she provided me with two decadent dessert recipes for the gluten-free community that anyone who loves to bake - gluten-free or not - will love.
This time, Priscilla offers two interesting and unique salad recipes. Since so many of us are lightening up post-holidays (myself included), it's an ideal time to share them. For the recipes and more on Priscilla, visit our blog. Enjoy, and let us know if you try either one.

Our Website has a New Look
We have been making changes to our website... among them is a new look that we hope you'll find easier to read and navigate. We have also incorporated our blog (which previously "lived" off-site) into our website.
Our web development is a work-in-progress as we continue to add more content, images and features in the coming months. In the meantime, our Buying Club page has also been updated to reflect 2013 buying dates and policies. A Message from our Produce Coordinator
"In my role as the store's new Produce Coordinator, I hope to bring the 'local' aspect of the Local Beet to prominence in our selection of fresh fruits and vegetables. The Beet does a great job of offering its customers an array of beautiful organic produce, but there is so much opportunity for us to strengthen our relationships with Connecticut farms. This winter, I am working towards this goal in the hopes that once the growing season picks up again, our shelves will be stocked with plenty of fresh, locally grown produce!"

The Beet Has You Covered for Cold and Flu Season
During this season of severe colds, flu and even pneumonia, we are stocking a great selection of drug-free, natural products that not only keep you from getting sick, but can lessen the severity of an illness. -The first Saturday of every month members receive a 10% discount on all groceries. The next discount Saturday for members will be this Saturday, February 2nd.
-JUSTFOOD is hosting a retreat in Costa Rica and will return from winter holiday on March 6th, ready to once again serve you great juices, smoothies and raw chocolates.
