Season's Greetings!
It's time again for seasonal festivities and merriment! We have a full line-up of special events planned for both the Chester Holiday Markets on Sundays and Friday's annual Holiday Stroll, including a Terry Walters book signing and demo event and a book signing for a special children's book that promises to enchant adults alike. And the Upstairs Kitchen is cooking up some holiday magic too. Details on all of that and more follow.
And to gear up for all the holiday fun to come, the Beet has stocked up on favorite holiday staples for all your cooking and baking. Mandy and Kim have been busy ordering great holiday gifts, so don't forget to make us your first stop for all your holiday shopping!

Terry Walters at the Beet!
We are super excited about welcoming Terry Walters to the Beet during Chester's annual Holiday Night Festival, on Friday, December 7th from 5:00 to 8:00 pm!
Terry has written two highly acclaimed cookbooks and is at the forefront of the clean eating lifestyle movement. She will be demonstrating her shallot fig spread, a quick, easy and delicious recipe, perfect for the holidays. Come on in to the Beet and meet Terry! In the meantime, here's the recipe:
Shallot Fig Spread
1 cup dried Turkish figs (about 12)
2 cups water
7 shallots, peeled and thinly sliced
1 tablespoon extra virgin olive oil
1 tablespoon grated fresh ginger
Zest of 1 large orange
Juice of 2 oranges
2 tablespoons maple syrup
Discard tough stem ends from figs and cut fruit into halves. Place in small pot over medium-high heat with 2 cups water and bring to boil. Simmer until liquid is reduced to a half cup (20 minutes). Remove from heat and set aside. |

Dec. 2nd - Suzie from Suzie-Uie, A Voluntown, CT company exclusively focused on gluten and allergen-free Graham cracker-less products, will be talking about her products and selling 2 kinds of cheesecake, her crusts and star cookies. ww.suzie-uie.com
Dec. 9th - Josh Chalmers will be on the porch to sign copies of his new children's book. See below for more on Josh.
Dec. 16th - Heather from Many Summers Farm in New Hampshire (who grew up in Deep River) will be selling USDA grass fed beef and pork.
Dec. 23rd - Brittney Blye of Hamsa Healing will be discussing the essential need for essential oils. |

Book Signing at the Beet
 We're excited about welcoming Josh Chalmers to the Beet! On Dec. 9th, during the Chester Sunday Market, Josh will be signing copies of his new book, Change the World Before Bedtime, on the front porch. Josh's charming book takes an inspiring glimpse into how simple daily deeds like a kind word or smile can make a big impact. Although designed for grades pre-K to 4th grade, Change the World Before Bedtime makes a great gift for adults too! Beet Elves Needed!
If you are still uncertain about whether you are on the naughty list, come in and help your odds! Thursdays are our delivery day, and throughout the holiday season, Mandy could use your help! Any amount of time you can give, large or small, is greatly appreciated, as the Beet is almost 100% volunteer run.
Additionally, we are organizing 2 Inventory Party nights. A special opportunity to get to know your Co-op!
Sip and Sort - We have promised our accountant that before the New Year we will have an accurate and clean inventory count in order to present paperwork for loans. These will happen on two nights: December 13th and 20th, from 7-9 pm.

What's Cooking at the Upstairs Kitchen
Upstairs from the Beet, Chef Amanda Cushman will kick off a great start to the Holidays with hors d'oeuvres that stimulate the appetite, make a good first impression and appeal to guests with their interesting combinations. Tuna Tartare on Rice Crackers, Corn Cakes with Smoked Salmon and Creme Fraiche, Hoisin Ginger Pork Skewers, Deep Fried Brie with Lingonberry Sauce and more will be instructed.

About the Chef: Amanda Cushman is a culinary educator who has cooked professionally for over thirty years.
