From The Writer's Kitchen

As the temperatures start to rise, cool and refreshing summer salads are simply delicious and delightful! 

Pineapple Fruit Salad, made with pineapple, banana, strawberries and grapes, is one of my favorites.  You can serve it in a bowl, but I like carving out the center of a pineapple and serving it at any meal.  

My sister-in-law, knowing that my husband and I have grapefruit and avocado trees on our property, suggested I try mixing the two together.  This inspiration resulted in my Grapefruit and Avocado Salad recipe.
 
I've also been reading a lot about quinoa and experimenting in the kitchen with different ingredients.  One of my experiments Mediterranean Quinoa, is a real winner and goes great as a compliment to chicken or fish!

Happy Father's Day to the AMAZING MEN in my life
Happy Father's Day to all Dads on Sunday, June 16.  Growing up, I loved to make Sunday breakfast for the family and I still do! It's one of my most favorite meals of the day.   On Father's Day,  I especially enjoy catering to my Dad.  Try my Pineapple Applesauce Muffins with scrambled eggs, a quiche or omelette for a fabulous Father's Day breakfast or brunch. 
 
What Makes A Dad

God took the strength of a mountain,
The majesty of a tree,
The warmth of a summer sun,
The calm of a quiet sea,
The generous soul of nature,
The comforting arm of night,
he wisdom of the ages,
The power of the eagle's flight,
The joy of a morning in spring,

The French Country Table

A meal is always more enjoyable when you make it an "experience."  Set the stage for a romantic country table to serve your favorite summer salad.

How did I get this look?  I used country French as my inspiration - lots of blues, whites and pastels. I also went through my cabinets and closets and collected everything that reminded me of a French country picnic.  In one of my closets, I even found a wonderful framed piece of art that said "plantes" and "parfum" (see yellow rose in the photo to the right).

A little succulent made a great centerpiece in a  ceramic blue pot I found lying in the garage.  The only purchase - glass blue goblets I found at the 99 Cents Only Store, $1.00 each.

For a great read:   "Sea Glass" by Anita Shreve.  When an English biographer, Mr Moxton, sets out to write a story on the Rose Street Massacre of 1983, he interviews elderly Honora Beecher, one of the few remaining survivors. Centred around union labour and the textile mills of Depression-era New Hampshire, the massacre involved Honora's husband Sexton. Nearly fifty years have passed and, although she has plenty of time to reflect, the story is still hard to tell. Moxton wants to know everything and sets out to get Honora's and her late husband's life story to tell the tale. Seen from the alternating points of view of Mr Moxton and Honora Beecher, this is the story of two divergent lives, each experiencing love and loss, sorting our the past and looking for one thing and finding another.
  
 
 


Simply GREEN Living: Stay Sun Safe Playing Outdoors 
  

There are so many sunblock and sunscreen products on the market it is often difficult to make a choice as to what product will work best.

 

SUNBLOCK

If you have senstitive skin, sunblocks containing Titanium Dioxide or Zinc Oxide, act as a wall between your skin and the sun.  While sunblocks do not protect against UVA Rays, they contain ingredients that reflect and scatter the UVB light.  Titanium Dioxide and Zinc Oxide are also less irrigating that the Parsol 1789 found in sunscreen.  Note: Some brands combine sunblock and sunscreen.

 

SUNSCREEN

Sunscreen contains chemicals that protect your skin by absorbing and reflecting UV rays, allowing a certain range of UV light to be absorbed into the skin.  Look for Parsol 1789 in brands.  Sunscreen protects against some UVA rays (which can cause wrinkles and the deadliest for of skin cancer) and UVB.  You get a bit more protection, so this may be the better choice.

 

MEXORYL SUNSCREEN

If you want more protection against those deadly UVA rays, there's a new product on the market recently approved by the FDA, Mexoryl sunscreen.  While sunblocks ans sunscreens protect against UVB rays, and sunscreen some UVA rays, Mexoryl is the only product on the market that can protect against MOST UVA rays.

L'Oreal (La Roche-Posay) holds the US patent and this product can be found in most pharmacies and grocery stores.
