Tomorrow we welcome Texas Saké Company for a tasting of their organic Texas Sakés.  From their website: Texas Saké Company is the: 1st Saké from Texas Rice, 1st Organic-Only Saké Kura in North America, 1st Organic Alcohol made in Texas, 1st Independently-owned Saké maker in the USA, 1st GoTexan Sake Manufacturer - only the best Organic Texas Rice in our saké! Sake in Texas? Texas has a large rice growing tradition. For a long period during the early 20th century, Texas was the second largest rice producer in the USA. The rice we use in our saké is a variety grown from Japanese seed that arrived here more than 100 years ago. This history is what allows us to make great saké and we're putting this great tasting history in a bottle. Come check it out!

Notes From Texas Sake Co.

 

Tumbleweed Bone Dry 

375 ml - this is our newest style sake. Called "karakuchi" in Japan, it's an extra dry version of the Whooping Crane. Crisp and fruity, it is wonderful with buttery fish. Made using a long fermentation and aging to produce a crisp white wine-like body and balanced acidity. Yamahai Junmai Karakuchi. Addditional 3 months fermentation. Wild yeast. More nutty and rich seeming on the nose, to me, with brighter & more citrusy seeming fruit on the palate.

Whooping Crane Tokubetsu Junmai 

Our filtered sake.  375 ml. Whooping Crane is our Tokubetsu Junmai. Tokubetsu is a special designation of saké denoting that that the saké is unique in some way. Our saké qualifies for this designation because the rice we use is a Texas variety, unique amongst the saké of the world. Both our Whooping Crane and Rising Star are the first and only saké made from Texas rice. Junmai is a premium designation of saké that denotes purity; our saké is made of only rice, water, koji and yeast, with no additional additives or preservatives. Organic Tokubetsu Junmai Saké. In 1904 Japanese Baron Matsudaira visited Texas and said, "I have traveled all over the world, but have never seen any other country to compare with so well cultured for rice".  More than 100 years later we use the Baron's rice to make our delicious saké.  Every bottle is handmade using traditional saké methods with only the finest harvested local organic rice! This clear saké has rich apple and pear flavors. Enjoy warm at 110F and chilled at 50F. Produced and Bottled by Texas Sake Co. Austin, Texas. 16% Alc/Vol. Certified Organic by the Texas Department of Agriculture. Yamahai Junmai Tokubetsu. A traditional full-bodied dry style saké with delicate aromas and a balanced full body.

Rising Star 

375 ml. Rising Star: Nigori Junmai Organic Saké. In 1904, Japanese Baron Matsudaira visited Texas and said, "I have traveled all over the world, but have never seen any other country so well cultured for rice".  More than 100 years later we use the Baron's Texas rice to make our delicious saké.  Every bottle is handmade using traditional saké methods and only the finest local rice. Creamy and smooth with coconut and cider flavors. Enjoy chilled at 45F. Produced and Bottled by Texas Sake Co. Austin, Texas. 16% Alc/Vol. Yamahai Junmai Nigori. A dry and balanced unfiltered saké with rich rice, fruit, and smoke notes.
