Many of the 2010 Brunellos sold out within days of release this past spring. Willoughby, Cellars at Jasper Hill (Greensboro, VT), Cow's milk
The Cellars at Jasper Hill produce some of Vermont's finest artisan cheeses (Bayley Hazen Blue, Cabot Clothbound) and Willoughby is part of this tradition. Originally developed by Marisa Mauro at Ploughgate Creamery, Willoughby is a washed rind cheese made from cow's milk. The thin, delicate, rosy-orange rind lends a subtle earthiness to the rich, soft interior.  $13.99/8oz.(227g)

Volpi Foods, based in St. Louis on The Hill, was founded by John Volpi in 1902. Originally from Milan, Italy, his dream was to bring the art and craft of dry curing to his new country. Now in the third generation of family leadership and ownership led by John's grand-niece Lorenza, the tradition thrives.
