I hope everyone had a wonderful and safe 4th of July. Freedom isn't free. During this month of celebrating Independence Day, please remember to pray for our troops who put their lives on the line for all of us. Please include a long prayer for the United States and her economic recovery.

Family News 

 

Okay, I'll never stop being a tomboy. I always work in my yard a lot, but this time a dangerous spider decided to bite me on my left arm. I had no idea spiders carry infections and bacteria, plus I'm allergic to their bite. My arm looked like a swollen, overripe tomato with a bad infection. My doctor was mad and worried about me. He put me on medicine to fight the allergic reaction, which made it really hard for me to sleep, and an antibiotic for the infection. I had to take this medicine for ten days and rest, plus go back so he could keep an eye on the bite. I felt like death warmed over, but I'm doing a lot better now.

Yep, my husband and I armed ourselves with bug spray and went hunting spider webs and killed every spider we could find in the yard. We'll continue this routine every other week and I'll have to be a lot more careful from now on.

 

I want to thank all of you who purchased any of my books and gave me encouragement. I've decided to take a much needed rest and vacation for the remainder of the year. My husband took his last shot for the cancer he had. Please put John on your prayer list. He'll have to take tests to make sure the cancer doesn't return. He loves to travel, so our family wants to help him do just that for a while. More than anything in this world my husband is my soul mate. We've been happily married for 50 years. 

 

E-Z Cooking

 

Zucchini Brownies
(Okay, these sweet, moist brownies will surprise you at how good they taste.)

 

1 cup butter, softened
1 � cups sugar
2 eggs
� cup plain yogurt
1 teaspoon vanilla extract
2 � cups all-purpose flour
� cup baking cocoa
1 teaspoon baking soda
� teaspoon salt
2 cups shredded zucchini

 

Frosting:
2/3 cup semisweet chocolate chips
� cup creamy peanut butter

 

In a large mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in yogurt and salt; gradually add to creamed mixture. Fold in zucchini.

Pour into a greased 13 inch X 9 inch X 2 inch baking pan. Bake at 350 degrees for 35-40 minutes or until a toothpick inserted near the center comes out clean.

 

For the frosting, combine the chocolate chips and peanut butter in a small saucepan. Cook and stir over low heat until smooth. Spread the frosting over the warm brownies. Cool on a wire rack. Cut into bars. 

 

Yield: about 1 � dozen.
