Roasted Herb Vegetables

 

Ingredients: 

  • Red or yellow potatoes
  • Asparagus Tips
  • Carrots
  • Zucchini
  • Olive Oil
  • Minced Garlic
  • Fresh Thyme
  • Salt & Pepper

Instructions:
 

Preheat oven to 425.

Depending on how big of a baking sheet you have will determine how many veggies you need. All of the veggies need to have room on the sheet.

In a large bowl Cut all veggies to about the same size.

In a small bowl mix (just enough to coat veggies) olive oil, minced garlic, salt & pepper together, make sure you coat the garlic good with oil you do not want it to burn (YUCK!)

Spread out evenly over the baking sheet and bake for 45 minutes!! YUM!
