As we make our way through the winter months, the season is slowly turning to spring. As spring approaches, flowers begin to bloom and trees start to turn green. Things that have been dormant begin to come to life with warmer temperatures and more sunshine. Change is happening all around us.  

 

Change is coming to Cascade Title of Cowlitz County. Manager Joel Lengyel is moving to our Walla Walla County office. Long time Cascade Title employee LeeRoy Parcel (that's me) has been promoted to the position of manager of Cascade Title of Cowlitz County.  

 

I began my career in the title industry in 1979 and have worked for the Schreiner Group of title companies since 1989. Besides being a title officer, I am also an LPO.   I will continue my title and escrow work along with my duties as manager. I am excited by this opportunity and have a very supportive staff to work with. In the escrow department we have LPOs Alison Peters and Bonnie Woodruff. Assisting them is the cheerful Diane Kenneway. This dynamic trio strives to get your escrow transaction closed in a timely and professional manner.   In the title department we have long time Title Officer Dennis Bird. Dennis brings very solid knowledge about title issues in Cowlitz County. Providing support for all are Lindsey McTimmonds and Connie Bjornstrom. Lindsey is responsible for getting documents recorded at the county and is also instrumental in marketing Cascade Title. Connie, as receptionist, is usually the voice you will hear when you call Cascade Title. She is also responsible for getting our preliminary title reports and policies out.   With the great staff we have, Cascade Title is positioned to provide our customers with outstanding service for your title and escrow needs.

Lindsey's Mexican Stuffed Shells 

 

Ingredients:

  • 1 lb jumbo pasta shells (you'll have a few extra if you break any)
  • 1 pound ground beef
  • 1 packet of dry taco seasoning
  • 2 tablespoons oil
  • 1 medium yellow onion. finely chopped
  • 2 garlic cloves, minced
  • 1 jalapeño, seeded and minced
  • 1/4 cup roughly chopped cilantro leaves
  • 1 1/2 cups salsa
  • 1 cup taco sauce (I used Ortega because it had the best ingredients)
  • 2 cups shredded cheddar jack
  • 3 green onions, thinly sliced

Directions:

  1. Preheat oven to 350 degrees.
  2. Cook ground beef, add seasoning as directed on package
  3. Bring a salted pot of water to a boil. Cook shells for 9 minutes, or until slightly undercooked.
  4. Meanwhile, in a large skillet over medium heat, heat oil. Sauté onion until onion is translucent.
  5. Add beef, garlic and jalapeños to the skillet. Cook until heated through. 
  6. Turn off heat and stir in cilantro.
  7. Pour salsa on bottom of 9×13 baking dish. Stuff each shell with the vegetable mixture and place in the baking dish. Top shells with taco sauce.
  8. Bake for 30 minutes. Remove the foil and add the cheese. Bake for an additional 15 minutes.
  9. Serve shells topped with green onions.
