THIS WEEK'S PRODUCE
Another abundant week - corn is on the menu and we are so grateful to a group of avid gardeners for supporting us this year in the growing of corn. Who doesn't love a good ear of corn? It's been difficult for us to commit to grow and harvesting weekly as we have limited space, so, this year we introduced the idea of contracting out the growing of corn and the folks that took us up on the offer are harvesting their first crop this week. So, welcome back corn and thank you to the growers!
Equally as exciting is the appearance of the famous Faye Elberta peach. Here's the story behind this amazing variety that miraculously due the work of growers like Tyson Hill Farm we still can enjoy today.
FAYE ELBERTA PEACHES ARE IN!! The classic run-down-your-arm peach!! Indira from Tyson Hill Farm speaks fondly of this peach that is now on the Slow Food's list of endangered fruits: "Fayes are no longer a standard cannery-run peach nor are they shipped, as they once were, by the train load from Stanislaus and Merced Counties to eastern markets. (Imagine how green these delicate fruit must have been picked to survive the transcontinental journey in those days before refrigerated box cars.) When we wanted to replant our Faye Elberta trees 15 years ago, we couldn't find a nursery that was selling this variety anymore. Burchell Nursery in Oakdale propagated our trees on a special order. However, Fayes have since become commercially available thanks to the increase in farmers' markets."

RECIPE of the week
Here's a couple of recipes that found their way to us via customers:
Eggplant Tomato Casserole (The customer writes: So-o-o- easy and so good. I prefer thicker slices of toms and sometimes don't dry and turns out OK)
2 large tomatoes sliced thin ½ t salt 2 med eggplants ¾ t dried oregano ¾ t dried basil 2 cloves garlic, chopped ½ c heavy cream 1 ½ c Fontina cheese grated
Place tomatoes on paper toweling, salt. Place towel on top, stand 30 minutes, pat to remove liquid. Coat eggplant w/cook spray or oil, grill 6" from coats or broil on oiled cookie sheet, 5 minutes on each side. Heat oven to 350 degrees. Coat large baking dish w/cooking spray. Arrange eggplant and tomatoes, alternating around and up sides, keep in single layer. Place a few down the center, sprinkle w/oregano, basil and garlic. Pour cream over top, sprinkle w/cheese. Cover w/foil and bake at 350 for 45 minutes or until bubbly. Remove foil and bake 10 minutes until cheese is golden. Cool 10 minutes and serve warm or room temp.
Tomato & Zucchini Gratin
1 halved garlic clove 1 pound thinly sliced zucchini 2 pounds small, firm, thinly sliced tomatoes 2 T EVOO 1 t fresh thyme 1 C freshly grated parmesan*
Preheat oven to 450 Rub the bottom of an oval ceramic or glass pan with the garlic Alternating slices of tomato and zucchini, arrange the vegetables in a single slightly overlapping layer in the pan. Sprinkle with the thyme and oil. Bake until meltingly soft (Approx. 20 minutes) Sprinkle with the cheese and broil until the cheese bubbles. Serve immediately.
* San Joaquin Gold would work well too.
Either dish may be garnished with julienned basil just before serving.

prepare us for the 21st century. Behind the scenes of Outer Aisle is Taylor
Mountain Gardens. Located just around the corner on Main Street in
Douglas Flat, our nearly two acre "beyond organic" farm produces a large
variety of seasonal vegetables including these seasonal highlights:
summer heirloom tomatoes, fall cauliflower, winter carrots and spring
potatoes to name just a few!
OuterAisle FOODS operates a year round CSA (Community
Supported Agriculture) program. We distribute the highest
quality, local, seasonal and regional produce and products to members
all over Calaveras and Tuolumne Counties. We only purchase product from
farms and producers who are committed to ecologically sustainable
practices and go beyond the National "Organic" standards.
