Our mission for the Cafe is to serve healthy wholesome dishes using the ever-changing seasonal fresh  ingredients from farmers like us. Encourage a passion for cooking and
life long healthy eating.

OUR VISION
We'll  feature a blackboard menu, highlighting the finest produce and ingredients our region can offer, encourage recipe sharing, host cooking classes and demos, and for those on the run, we'll have take-out items
made in our certified kitchen.

Sweet crunchy Vogliotti "1892" red onions and Suyo Long Cucumbers marinated in Balsamic vinaigrette tossed with farm fresh Sungold Cherry Tomatoes and Italian Parsley. Served with sliced Hass Avocado, Greek olives, seasonal summer fruit, Fiscalini San Joaquin Cheddar and Aria's French baguette.

Mixed Garden Lettuce topped with farm fresh Sun Gold Cherry Tomatoes, Roasted Baby Beets, Purple and Gypsy Peppers, Suyo Long Cucumber, dried Mission Figs, Toasted sunflower seeds, Haas avocado, Vogliotto Heirloom red onion, fresh parsley with a fresh cilantro and a grapefruit-herb vinaigrette. $12/ 7.5

And it feels like we are finally here! We'll be 90% planted by the end of the week and that means summer for a while. Harvesting the first eggplant, cucumbers and hot peppers has gotten our culinary juices flowing. How does caramelized eggplant, Greek salad with cucumbers, sungold cherry tomatoes, peppers, basil and avocado sound?

RECIPE of the week
 
Tomato & Zucchini Gratin

1 halved garlic clove
1 pound thinly sliced zucchini
2 pounds small, firm, thinly sliced tomatoes
2 T EVOO
1 t fresh thyme
1 C freshly grated parmesan*

Preheat oven to 450
Rub the bottom of an oval ceramic or glass pan with the garlic
Alternating slices of tomato and zucchini, arrange the vegetables
in a single slightly overlapping layer in the pan.
Sprinkle with the thyme and oil.
Bake until meltingly soft (Approx. 20 minutes)
Sprinkle with the cheese and broil until the cheese bubbles.
Serve immediately.

* San Joaquin Gold would work well too.

Either dish may be garnished with julienned basil just before serving.

Green Beans with Pumpkin Seed Dressing

Dressing
½ cup pumpkin seeds
¼ cup olive oil
¼ cup water
2 tablespoons lemon juice
1 clove garlic, minced
½ teaspoon ground cumin
½ teaspoon salt
2 tablespoons cilantro, finely chopped, separated
Pinch cayenne pepper

Beans
¾ pound green beans

Combine ingredients in a blender. Steam green beans and serve with a little dressing on top.

Located just around the corner on Main Street in Douglas Flat, our nearly two acre "beyond organic" farm produces a large variety of seasonal vegetables including these seasonal highlights: summer heirloom tomatoes, fall cauliflower, winter carrots and spring potatoes to name just a few! 

OuterAisle FOODS operates a year round CSA (Community Supported Agriculture) program. We distribute the highest quality, local, seasonal and regional produce and products to members all over Calaveras and Tuolumne Counties. We only purchase product from farms and producers who are committed to ecologically sustainable practices and go beyond the National "Organic" standards.
