THIS WEEK'S DELICIOUS MENU: Featuring "Primavera" pickings from our Farm
We can confidently say that the harvest season has finally begun! As of this week 80% of all the ingredients featured in the menu come from our 2 acre farm! Please consider going on one of our Farm Luncheon Tours scheduled for June and September. Check out the event section below to find out more!

Navy Bean Soup with Garden Kale and Rosemary (Served with Aria's Sourdough Bread) $6 Spicy Fennel Berkshire Pork Sausage accompanied with Fava Beans and 2012 Sun-dried Tomatoes, over hand-made Angel hair pasta tossed in a fresh Basil Pesto $13 (all vegetables fresh from our farm)
Garden Swiss Chard Gratin with Val d' Aosta Fontina, Portobello Mushrooms and a sweet Balsamic reduction. Served with French Lentil & Feta Tabbouleh $10 Awesome Spring Mix Salad : French Breakfast Radish, spring Red Onion, Sugar Snap Peas, Feta Cheese, and toasted spiced Pumpkin Seeds. Your choice of Creamy Black River Gorgonzola Dressing or Ginger Poppyseed Vinaigrette. (all veggies from our farm) $8 (Served with Aria's Sourdough bread upon request)

RECIPE of the week
SWISS CHARD WITH RAISINS AND ALMONDS
INGREDIENTS:
- 1/2 cup dry Sherry
- 1/2 cup raisins
- 2 tablespoons olive oil
- 1/2 cup sliced almonds
- 4 garlic cloves, thinly sliced
- 4 bunches Swiss chard, center ribs and stems removed, leaves cut into 2-inch pieces (about 16 cups)
- 1 Fresno chile or red jalapeño, seeded, thinly sliced
- 1 tablespoon finely grated lemon zest
- 2 teaspoons fresh lemon juice
- Kosher salt, freshly ground pepper
Preparation

Bring Sherry and raisins to a simmer in a small saucepan. Remove from heat; let cool.

Heat oil in a large heavy pot over medium-high heat. Add almonds and cook, stirring frequently, until just beginning to brown, about 2 minutes. Add garlic and cook, stirring, until fragrant but not browned, about 1 minute more. Add chard by handfuls to pot, tossing to wilt between additions, and cook until tender, about 4 minutes.

Add raisins with soaking liquid, chile, lemon zest, and 2 teaspoons lemon juice. Season with salt, pepper, and more lemon juice, if desired, and toss to combine.

Mountain Gardens. Located just around the corner on Main Street in
Douglas Flat, our nearly two acre "beyond organic" farm produces a large
variety of seasonal vegetables including these seasonal highlights:
summer heirloom tomatoes, fall cauliflower, winter carrots and spring
potatoes to name just a few!
OuterAisle FOODS operates a year round CSA (Community
Supported Agriculture) program. We distribute the highest
quality, local, seasonal and regional produce and products to members
all over Calaveras and Tuolumne Counties. We only purchase product from
farms and producers who are committed to ecologically sustainable
practices and go beyond the National "Organic" standards.
