DCTS Students Help Hospitals Practice Disaster Drills

DCTS Medical Careers and Emergency Protective Services students participated in the Delaware County Disaster Drill on October 10th at partnering hospitals: Taylor, Crozer-Keystone and Mercy Fitzgerald. Students acted the roles of "patients" who were processed in the ER and sent to many departments (OR, ICU, Radiology, etc.) as their "injury" dictated. This was a way for every hospital in the county to prepare in the event of a mass-casualty disaster. The day was a success and our students were an integral part of the drill which is vital for professional training and troubleshooting operations during such events. The experience provides our students with the opportunity to be on the receiving end of patient care and to see the hospital from the patient's perspective. Their experience yesterday provided them with some unique insight as to what it's like to be a patient in an acute care setting. They will be better future health care professionals because of their participation in this important drill.

Culinary Institute of America Visits DCTS

On Wednesday, October 10th, 2012 the Culinary Arts & Food Service Management class had its first demo of the 2012-2013 school year. The Culinary Institute of America sent in seasonal demonstrator and alumnus Aaron D. Gonnelly. He presented Vegan cooking techniques, cuisine which uses no animal products.

Students learned how to use grains and plant proteins to provide the same structure and density found in animal products. He prepared "sausage" using red beans and sauerkraut as a base, pureeing it with a variety of spices, such as coriander, white pepper, garlic/onion powder, paprika, maple syrup and liquid smoke. Once the mixture was smooth he added flour and pure gluten to tighten the mixture into a paste. It was then divided and rolled into links with the help of a few student volunteers. The sausages were cooked in a Bamboo steamer and then allowed to rest before slicing. Accompanying the sausage was German style potato salad without bacon. Potatoes that are dressed with a warm dressing of onion, celery, bread and butter pickles. The students gained a first-hand experience of this up and coming movement in the food industry.  It was a great learning experience for all!  For a full photo album, see our Facebook.

Aaron Gonnelly graduated the CIA with an associate's degree in May. Right now he is working as part of the recruitment team for the CIA, before starting his Bachelor's degree in February. On behalf of the Culinary Arts & Food Service Management Class, we would like to give a big Thank You to Aaron for great information and a job well done.
