A few months ago, I wrote about how to make a quick gumbo.  This week's Chicken and Sausage File' gumbo is not quick.  It's made the real Cajun old-fashioned way - simmered on the stove for several hours.  Hope you enjoy!

Chicken & Sausage File' Gumbo

1/3 cup oil

1/2 cup flour

2 medium onions, chopped

1 bell pepper, chopped

3 ribs celery, chopped

1 lb. smoked sausage, sliced

1-1/2 lb. chicken, cut in pieces and seasoned with salt, pepper, and cayenne

1-3 teaspoons file'

 

Make roux with oil and flour.  

 

Cook down onions, bell pepper, celery, and chicken about 30 minutes, stirring occasionally.  Add smoked sausage and 6 cups of water.  Bring to a boil.

 

Lower heat and simmer for at least one hour or more.  Add salt and pepper to taste.

 

Take off heat and add file' to thicken.

 

Leave file' on table so each can add to their plate as desired.

Boudreaux comes home drunk one night, breaks some crockery, vomits and falls down on the floor.  Clotilde pulls him up, puts him to bed, and cleans everything. 

 

Next day when Boudreaux gets up he expects her to be really angry with him.  He prays that they should not have a fight.  

 

He finds a note near the table, "Honey, your favorite breakfast is ready on the table. I had to leave early to buy groceries.  I'll come running back to you, my love. I love you, Clotilde."  

 

Surprised by his wife's reaction, he asks his son, Johnny, "What happened last night?"

 

Johnny says, "When mom pulled you to bed and tried removing your boots and shirt, you were dead drunk and you said, 'Hey, Lady! Leave me alone.  I'm married!!!'"

Susan, I love your newsletter and recipes. You stated that the Shrimp and Grits recipe (in last week's newsletter) would be good as a meatless dish during Lent. Your recipe contains Tasso which is a type of HAM. Therefore, this would not qualify as meatless for Fridays in Lent. But, I will try it on another day.

You're so right!  I totally missed that tasso in there (and the chicken broth!)  

 

For Lenten Fridays, I would leave out the tasso and use vegetable broth in place of the chicken broth.  

 

I plan on trying my niece's recipe one of these Fridays.  She says it was really yummy!
