It's the middle of August and Race Week is upon us; summer has fully set sail and is gliding along. Having had more perfect beach days than not, it's hard to imagine a better summer.
A welcome sight is the Bartlett's Truck parked on Main Street each day with gorgeous produce direct from their farm for your table. Nothing says summer like island grown sweet crisp corn or bright juicy red tomatoes. We'll share a few creative recipes we've found in our quest to buy fresh and local ingredients for the dinner table.

Zucchini Gratin:
A spin on scalloped potatoes that has a wonderful crispy topping but none of the guilt! Yes, it's healthy but you won't mind one bit!
We found this recipe on the Eating Well Website. This has been an office-tested recipe, one tip: once it's been oven prepared pop it on the grill for a few minutes to add that little extra hit of back yard BBQ.
Tomatoes stuffed with cheese, fresh corn, garlic, shallots and bread crumbs, topped with cheese and grilled.
Recipe from a fun blog called "Grillin Fools.com" The recipes have nice step-by -step instructions along side pictures.
This one looks delicious, a great use for
left-over corn-on-the-cob and could be made ahead ready to pop onto the grill when guests arrive!
Whipped Feta With Cucumbers
:
Here's a dish that could be made as a dip or a nice,neat one bite appetizer. Serve the cucumber as a salsa accompanied by the whipped feta or spoon out a portion of the cuke and fill the cup with this light and fluffy Mediterranean cheese. (There's a trick to lessening the saltiness of the cheese.)

Nantucket Race Week is eight days of regattas, awards ceremonies, and parties. Race Week is hosted by Nantucket Yacht Club and Great Harbor Yacht Club to benefit Nantucket Community Sailing, and is the primary fund-raising event of the year for Nantucket Community Sailing.
