
Christmas is the time to gather around the tables with family and friends to enjoy traditional holiday dishes. The library staff was asked to submit their favorite recipes. Round up your loved ones and try one of these dishes. Maybe one of these traditional recipes will become your own!
Chex-Mix Buddies
Prep Time: 15 min
Start to Finish: 15 min
Makes 18 servings (1/2 cup each)
9 Cups Rice Chex, Corn Chex or Chocolate Chex cereal (or combination)
1 cup semisweet chocolate chips
½ cup peanut butter
¼ cup butter or margarine
1 teaspoon vanilla
1 ½ cups powdered sugar
Preparations:
1. Into large bowl, measure cereal, set aside
In 1 quart microwaveable bowl, microwave chocolate chips, peanut butter and butter uncovered on high 1 minute; stir.
2. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
3. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.

Sweet Potato Casserole with Marshmallows and Pecans
Ingredients:
2 ½ pounds sweet potatoes, peeled and cut into 1-inch cubes
¾ cup packed brown sugar
¼ cup butter, softened
1 ½ teaspoons salt
½ teaspoon vanilla extract
½ cup finely chopped pecans, divided
Cooking spray
2 cups miniature marshmallows
Preparations:
Preheat oven to 375 degrees
Place the sweet potatoes in a Dutch oven, and cover with cold water. Bring to a boil.
Reduce heat, and simmer for 15 minutes or until very tender. Drain; cool slightly.
Place potatoes in a large bowl. Add sugar and next 3 ingredients (through vanilla). Mash sweet potato mixture with a potato masher. Fold in ¼ cup pecans. Scrape potato mixture into an even layer in an 11 x 7- inch baking dish coated with cooking spray. Sprinkle with remaining ¼ cup pecans; top with marshmallows. Bake at 375 degrees for 25 minutes or until golden.
