I sure hope you've been using the scoop instructions from last newsletter - I'm taking a Pilates departure this month to talk about scoop in a nutritional kind of way. Here's a few tips and tricks from my kitchen to yours where I have the luxury of relying on my husband for delicious savory Italian dinners. Sounds good right? It is most nights. Except for when Dad isn't home for dinner or isn't up for cooking on a particular night. Having grown up on this stellar cuisine my two girls are loathe to let Mom in the kitchen. However, they do rely on me for breakfast. And I must admit - I'm pretty good at whipping up stuff that doesn't require actual cooking!
Here's the scoop on a few summer eats for breakfast!
Eggs!
I'm a protein for breakfast junkie but filling up my sink with pans and spatulas is not appealing. I learned to poach eggs in the microwave in France when I was backpacking through Europe. Here's a little how to video!
Smoothies
This is a staple in my house. Fortunately my kids are not afraid of the color green and so veggies like Kale and Avocado get their fair share in my blender. I'm utterly disloyal to any particular combination but if you use a base of banana, ice and some type of Milk (I swing between Soy, Almond and Coconut) you pretty much can't go wrong adding two or three other items.
Fruit Salad
Not just any fruit salad - but one with veggies. And special fruits you don't always use. Plums for instance. Avocados. Cucumbers. Oranges. Peppers. All mixed up with a bit of Honey or sweet Balsamic drizzle and you are good to go. Trust me - the whole family will dig in. Squeeze a lot of lemon or orange juice on it to keep in the fridge over night and freshen up the next day with a different fruit. Did someone say grapes?
Best of all - no cooking! No flames, pots or pans.
