I went on a tour of 4 RV Parks around Florida (all different but all similar to our size) & then I attended numerous educational seminars.
Let me tell ya, we are doing a great job here at Diamond M Ranch Resort staying up to date & we will continue to strive to offer our guests top of the line service.  

Here is my favorite picture from my trip, it is what I got to wake up to every morning & watch the sunrise...my cup truly runneth over.

 Favorite Holiday Recipes 

7-up Salad

1 large box lime jello
2 cups boiling water
2 cups 7-Up  
1 large can crushed pineapple, drained (reserve the juice) 
1 to 2 cups miniature marshmallows 
1 granny smith apple, peeled & chopped 
 
Dissolve the gelatin powder in the boiling water. Stir in the soda. Place in a serving bowl. Chill until partially set, about 20 minutes. Stir in apples, pineapple, and marshmallows. Chill again until completely set.    

Topping:
1/2 cup sugar 
2 tablespoons flour 
1 cup reserved pineapple juice 
1 egg, beaten 
2 tablespoons butter 
1 cup Cool Whip
 
In a saucepan, combine the sugar and flour until mixed. Stir in the pineapple juice until mixture is smooth. Place over medium heat and stir in the egg and cook, stirring constantly, until mixture is thick.  Stir in the butter and let cool.
When mixture is cool, fold in the whipped cream. Spread the topping over the gelatin mixture in the bowl.

Cream Cheese Chocolate Cupcakes

1 egg
1/3 cup sugar
8 oz cream cheese
1 cup chocolate chips
Cream egg, sugar, cream cheese, a pinch of salt and chocolate chips.  Set aside. Separately combine sugar, oil, water, cocoa powder, soda, salt, flour, vinegar and vanilla.
1 cup sugar
1/3 cup oil
1 cup water (or coffee)
1/4 cup cocoa powder (unsweetened) 
1 teaspoon soda
1 teaspoon salt
1 1/2 cup flour
1 Tablespoon vinegar
1 Tablespoon vanilla

In muffin tin (small, medium or large) either greased or with cupcake holders, put one spoonful of chocolate mixture (about 1/2-2/3 full) then put one spoonful of cream cheese mixture on top.  Bake 350 for 15-30 min depending on size and oven.

These make a delightful addition to our

Blair:
 "On my parents anniversary, December 15th, we would always celebrate by going out to cut down our Christmas tree."

Ronna:   
"Christmas Eve Buffet followed by opening gifts to each other; then Santa comes in the night leaving our stocking on unwrapped gifts."  (It makes it easy on Santa)

D. Anne:    
 "My favorite memory would be writing, directing and performing a nativity play with my cousins every year at Christmas"

Josiah:
"I like the tradition of having all our family together.  Usually Christmas dinner has over 25 family members & I just love being that close with my extended family."

Toad:
"The white elephant party"

Sonora:
 "I love when we put all of our names in the hat & draw to see who in our family we will buy a gift for"

Wilfredo: 
"I'm excited to spend Christmas with my mom & D.Anne in
Las Vegas this year"


Leslie: 
"Christmas Eve is my favorite!  
The kids are all home & there is so much excitement! After dinner, before the kids get to open one present, we make a big pot of hot chocolate & gather around while Dad reads 
Twas the night before Christmas"

Family News
Blair, Ronna, Darius (Toad) and Sonora Martin along with Wilfredo Ruiz and Corey Smithwick made a trek to Fairbanks, Alaska to spend Thanksgiving with Josiah Martin attending University of Alaska Fairbanks.
The Parks Hwy was unplowed for a 100 mile stretch and forward movement was possible by the truckers with chains on blazing the path until...one didn't make the hill and along with an avalanche blocked the road for nearly 5 hours.  What can a group of 7 do in the car for 5 hours...

We finally made it to Fairbanks safely with very Thankful Hearts.  My cooperating teacher from student teaching back in 1990, Judy Shiffler and her husband Wendy, opened their home to us.  Their sledding hill provided fun for all!!

Wilfredo, from Nicaragua, experienced his first ever sled ride!

Bernie Karl, onwer of Chena Hot Springs, treated all 8 of us to Thanksgiving Dinner and a dip in the Hot Springs.

We were Blessed this Thanksgiving and the ride home was smooth sailing with sunset views of Mt Denali!!

We look forward to having Christmas at home with family and friends!!
