It's all for the love of bacon!
Whether it is breakfast or lunch, a meal or an appetizer, bacon is the perfect complement to your dish. Here are some ways to show your friends and family how much you love cooking for them!
Rigatoni with olives and bacon
6 slices bacon 1/2 large onion, thinly sliced
12 black olives, pitted and chopped
Small piece Parmesan cheese, (1-2 oz)
2 tablespoons marjoram, coarsely chopped 8 ounces rigatoni
Cooking Directions
In medium skillet, cook bacon until crisp (reserve drippings); blot, coarsely chop and set aside. In bacon drippings, sauté onion until soft and just beginning to brown, about 5 minutes. Meanwhile, cook pasta according to package directions, drain and transfer to warm serving platter or large shallow bowl. Toss pasta with bacon, onion and olives. Season with salt and pepper, to taste, toss again. Serve with shavings of fresh Parmesan cheese. Garnish with fresh herbs, if desired.
BLT soup
8 slices bacon, crisply-cooked 1 28-oz can crushed tomatoes 1 14 1/2-oz can chicken broth 1 15-oz can white beans, (cannellini or navy)
1 1/2 teaspoons Italian seasoning 2 teaspoons balsamic vinegar 1 cup leaf lettuce, shredded 1/4 cup fresh basil, thinly sliced
Cooking Directions
Coarsely crumble bacon & set aside. In 2-quart saucepan, stir together tomatoes, broth, beans and seasoning. Bring to a simmer; stir in vinegar. In small bowl, toss together lettuce & basil. Ladle soup into large soup plates or bowls; garnish each serving with crumbled bacon and lettuce & basil.
