Recipe of the Week
Baked Parmesan Kale Chips
There are different versions of kale chips, but the Parmesan cheese in this recipe adds some extra flavor. The chips are best when eaten soon after cooking.
12 oz kale, stems removed 1 tsp olive oil 1 tsp sea salt 1/2 cup shredded Parmesan cheese
1. Preheat oven to 350 degrees F. Lightly spray two large baking sheets with nonstick cooking spray. 2. Wash and thoroughly dry kale. Remove the leaves from the thick stems and tear in to bite sized pieces. 3. Place on baking sheets, spray with olive oil (or toss kale leaves in bowl with olive oil) and sprinkle with salt. 4. Bake about 10-12 minutes, turning to make sure they evenly crisp. Top with shredded Parmesan cheese, keeping a close eye on them, bake an additional 5 to 6 minutes until the edges are crisp but not burnt. Cooking time may vary.
Makes 6 Servings. Nutrition Information Per Serving: 70 Calories, 3g Fat, 5g Protein, 36g Carb, 1g Fiber, 450mg Sodium. Excellent source of Vitamins C and A. Decrease the sodium by eliminating the sea salt or Parmesan cheese.
